Hello any newbies and welcome.

This group started as a place for me to store recipes and other files
to go with the WW plan. Feel free to snag any recipes etc. This
isn't an active "group". I had to put it on moderated so the spammers
didn't clog it up!

Please say hello!

I am following the core plan... Now that I am trying to get back on track, I'm deciding what I want to do,.. flex  or core... or combo.  decisions, decisions.  I know one thing, I've been the same weight, but since I haven't been hitting the treadmill, my pants are on the tight side... weird, eh?

Hey there, I'm here and glad that you all are as well.  I just started Core on Thursday but not feeling like I've lost anything.  I need to lose about 35 more pounds (already lost 40).  I've been stalled for the past 9 months and it is very discouraging.  I just got back from the doctor and she is going to test my thyroid and if it's normal we are going to to have to talk about other methods of weight loss.  I've been OP this whole time too, so I'm just frazzled.  :(

How To Plan Meals For A Month
There is no secret to knowing how to get started with Once-A-Month-
Cooking
(OAMC) adventure.

But the key to being successful at it is to plan ahead.

Create or invest in notebook wherein you can organize and keep track
of your
meal planning, recipes, and grocery lists. If you are like most cooks
whether you realize it or not, you actually cook the same meals over
and
over again month in and month out.

Cooking once a month allows you to
prepare enough of those meals for an entire month.
You should divide the notebook into sections, the first being
designated for
recipes. If you are using a three-ring binder, or another type of
notebook
that will allow you to easily insert and remove pages, you can "work
your
system" in a more organized manner.

Create a separate page in your notebook for each recipe. It is
recommended
that you type or neatly write each recipe and place the page in a
plastic
sheet protector that will fit into
your notebook, or binder. This will protect your pages as they are
handled
frequently in planning and cooking.

Once you have all of your "standard" recipes in place, you can easily
incorporate new recipes that you would like to try into the binder at
anytime.
Prior to undertaking your major grocery shopping trip, sit down
somewhere at
a time when you can think and plan, and outline your meals for an
entire
month. This should be incorporated as a separate section in your
notebook.

Remember to allow for those nights you may want to eat out, or on the
other
side of the scale, those nights you may entertain guests and need more
servings. As you plan your main meal for each day, jot down a list of
ingredients that you will need to have available to prepare each
meal.
This can be done on a grocery shopping list pad that you can carry
with you
to the grocery store.

As you progress through your meal planning, you will be implementing
your
recipes, planning pages, and shopping list pad. Make sure you jot
down
every item and account for items that you will duplicate from recipe
to
recipe, which will help save on your grocery bill.

It is also a great idea to convert a section of your binder into
pockets for
money-saving grocery coupons. Your binder should accompany you to the
grocery store in the event you need to refer to it for anything
related to
the upcoming month of meals.
Remember, the key to success is to plan.

Are You Taking Things Personally?
Are you a sensitive person, easily upset and troubled by the slightest
things? Do you then overeat to feel better, instead of toughening up
and just moving ahead? Of course, you need to experience your
feelings. But just do it once. Try not to hold on and linger in feeling
bad or hurt. Let go of your suffering. Get over your misery and move
on. Above all, don't use food to feel better or help salve your
upsets. Surrender your problems into God's loving hands.
Then take action and make an effort to move on and deal with life's
inequities and hardships with the power of God behind you, loving you,
guiding you.

Be Satisfied
OK, what's so bad about you? Are you really that worthless? Are you
really so fat and ugly? Do you really deserve the harsh judgment and
low self-esteem you throw on yourself? Is your life really that
difficult? Or are your standards unrealistic or impossible?

Take a break from all the negativity and stress, and tell yourself that
you're OK. Be satisfied with what you've got, and how good you actually
have it. See the bright side of yourself for a change, instead of
constant self-assassination.

Get simple. Take things slowly… do what you can...give yourself a
little love, appreciation and respect today...and every day!

See what's good about yourself for a change. At the same time, be
realistic about what needs improving right away, and only do that. Make
changes in little increments, not life-stopping emergency interventions
all the time (like dieting).

Marinating 101
By Emma Bland | 7/29/2005

Marinades, seasoned liquids that foods are soaked in to add flavor,
are friend to the weight conscious, adding flavor without racking up
calories. Because only a small amount of the marinade is actually
absorbed (most of it remains in the container) marinating is a very
smart way to make a healthy dinner.

Marinades are composed of three parts: an acidic liquid, oil (to help
coat and keep things moist) and seasonings. The details are up to
you: Pick a liquid — citrus or tropical fruit juice, tomato juice,
soy sauce, vinegar, wine, buttermilk, yogurt — and use about 3/4 cup
for 2 pounds of meat (but don't sweat the proportions — you can't
ruin anything). Next, whisk in 2 teaspoons of oil. Finally, build
flavor with herbs, spices, onions, or garlic.

This is a great opportunity to use some of those dried spices on your
spice rack, but remember that simple is often best. Choose one
predominant flavor you want the food to taste like, such as lemon,
soy sauce or jalapeños, and pair it with others that will complement,
not compete with, it.

Tasty tip: A little honey, molasses or brown sugar will add sweetness
and caramelize deliciously during cooking.

Need a few suggestions to get you going? Think globally: When the
Caribbean beckons, go for steak in mango nectar. Swordfish or tuna
say Sicily: Try crushed tomatoes and black olives. Lamb kebobs, a
Middle Eastern staple, call for plain yogurt with mint and cumin.
Your trip to the French countryside is inspiration for bathing
chicken in a lemon-tarragon concoction. So spin the globe and
marinate away!

Here are three marinade examples that we cooked up:

Pineapple-Ginger
1/2 cup pineapple juice
1/4 cup soy sauce
1 Tbsp molasses
1" piece ginger, chopped
2 cloves garlic, chopped
2 tsp roasted peanut oil

Honey-Mustard
1/3 cup white wine vinegar
1/3 cup Dijon mustard
1/3 cup honey
2 tsp chopped fresh thyme
2 tsp olive oil
1/4 tsp salt
1/4 tsp pepper

Chipotle-Lime
3/4 cup lime juice
1 chipotle chile in adobo sauce, seeded, chopped plus 2 tsp adobo
sauce
3 Tbsp chopped cilantro
2 Tbsp chopped red onion
2 tsp vegetable oil
1/4 tsp salt
1/4 tsp pepper

How to marinate:
Put meat in a freezer bag or other airtight container and whisk
marinade ingredients together in a small bowl. Add marinade to meat.
Seal the bag or container, pressing out all the air, and place on a
plate on the lowest shelf in the refrigerator; turn occasionally. For
even more flavor, bring marinade to a boil after removing meat, then
use as a basting or dipping sauce. (Never re-use a meat marinade for
any purpose without boiling first.)

Marinating times:
seafood: 15 minutes-1 hour
chicken: 1-6 hours
beef, lamb and pork: 4-24 hours
vegetables, cheese and tofu: 30 minutes

desserts | So easy, so delicious, this recipe is bound to become a

1 medium pineapple
1 cup plain fat-free yogurt
5 leaves basil, chopped
1/2 tsp ginger root, finely grated
3 tsp McNeil Nutritionals SPLENDA (R) No Calorie Sweetener, or to

1/2- to 3/4-inch slices to yield about 16 to 20 slices total.

Bust out of a Workout Rut
By Karen J. Bannan | 7/29/2005

If you're bored with your fitness routine, try these tips from Scott
Cole, celebrity trainer and the author of Athletic Abs (Human
Kinetics, 2002).

Get Out
Whenever possible, go outside and participate in your favorite
activity al fresco, says Cole. That feeling of boredom may be from
being inside all day breathing stale air, says Cole. Try doing yoga
in the park or lifting weights in your backyard. "It's hard to be
bored when you're breathing fresh air."

Change the CD
If you suddenly start dreading your favorite class, take note: it's
probably not the activity that's boring, it's the same old
soundtrack. "Ask your instructor if she can change what she's been
playing. Or take a class with a different style of music," Cole says.
Try a Latin cardio, hip hop, jazz, or salsa class.

Mix it Up
You can make your workout more exciting by challenging your body and
your mind simultaneously. The key is to think about every movement
you take. For example, lift lighter weights but try moving through
each extension as slowly as you can. Walkers can do interval training
on the road, says Cole. Try some standing half-squats as you go
along, or stop and do some push-ups on a park bench.

Stay in the Moment
It's no wonder you get bored if you spend your workout thinking about
bills sitting at home or your project at work. Cole says you'll be
more focused if you push worries out of your mind. "If you find your
mind is wandering, take several deep breaths inhaling and exhaling
through your nose" and focus on what you're doing, he
says. "Breathing is a powerful way to soothe anxieties."

Get Dressed
You wouldn't go to a party looking frumpy but many of us don grungy
sweats and old t-shirts when we hit the gym. Bright, attractive
clothing that fits well and wicks away sweat will make you feel good
and may help you work out longer, says Cole. "When you look in the
mirror and you're inspired by what you look like, time will fly by.
You'll feel strong and positive if that's how you look."

Stretch and Stretch Again
Stretching, says Cole, is a forgotten exercise component. Be smart.
Stretch for at least five minutes after every workout. Says
Cole: "Anxiety is stored in a locked-up body. When you stretch you
release tension, and all of a sudden working out is fun again."

Top 12 Ways To Give Condiments a Flavor-Boost
By Leslie Fink, MS, RD | 8/3/2005

Sure, you could spend hours in the kitchen creating sauces and
dressings from scratch. But why would you when tasty combinations are
as easy as adding horseradish to bottled ketchup or chopped chipotle
peppers to low-fat mayonnaise?

"The addition of one item really can make a difference," says Robin
Vitetta-Miller, MS, author of Picnics: Easy Recipes for the Best
Alfresco Foods (Clarkson Potter, 2005). Chipotle peppers add heat and
smokiness, horseradish gives texture and heat, and honey can lend the
right amount of sweetness to just about any condiment.

Here are some of Vitetta-Miller's favorite ways to embellish store-
bought condiments and other supermarket items for use as vegetables
dips, sandwich spreads, burger toppings, entrée sauces and more.

Add wasabi powder or wasabi paste to low-fat mayonnaise for a spicy
vegetable dip or sandwich spread.

Get creative with Dijon mustard by adding a touch of honey and dill.
Bev Bennett, cookbook author and recipe developer, makes her own
honey mustard to get just the right level of sweetness. She also
throws in a pinch of crushed red pepper flakes for extra heat.

Mix together fat-free plain yogurt, shredded cucumber and garlic
powder for a simple Greek-inspired vegetable dip, turkey burger
topping or sauce for grilled chicken.

Add ketchup and mustard to bottled barbecue sauce and spread it over
meatloaf before baking for excellent moisture and flavor. Bennett
offers other barbecue sauce additions such as smoked paprika or
minced roasted garlic cloves.

Combine sesame oil, soy sauce and minced scallions for an easy Asian
dipping sauce for vegetables and steamed dumplings.

Create a creamy sauce for nachos, tacos, burritos and Tex-Mex wraps
by adding fat-free sour cream to prepared salsa.

Stir fresh fruit such as minced pineapple into low-fat cottage cheese
and serve with sliced apples for dipping.

Or go savory and mix salt-free garlic and herb seasoning (and fresh
herbs, if desired) with low-fat cottage cheese and spread it into a
pita filled with roasted vegetables.

Fold chocolate syrup into reduced-fat cream cheese and use as a fruit
dip.

Top your favorite burger with a dollop of ketchup combined with
plain, fat-free yogurt or nonfat sour cream.

Add some of the sauce (but not the actual peppers) from canned
chipotle peppers to either guacamole or ketchup for a little smoky
heat. Bennett suggests adding chipotle sauce (tastes like tomato
sauce with a hint of chipotle chili flavor) to plain yogurt as a
dressing for chicken salad.

Serve crab cakes with a sauce of low-fat mayonnaise spiked with
horseradish.

I am going on vacation until July 10th, I know I haven't been posting
much. I've been trying to get any possible fires caught up with at
work. And of course, it seems, the week before you go anywhere, more
things come up to be done.

I will be in Atlantic City, my brother has a time share. I know it
is one of the gambling capitals of the world. I am not a gambler,
going for the beach, to walk the boardwalk etc.

The plan is to get up every morning and walk.. I say this because a
few years back, my two nieces said about walking.. and guess who
walked...
ME !! However I loved that time alone in the morning, so peaceful.
I had my walkman with my enya music took in the breeze and the
sunshine at 6 a.m. I tried to rouse them several days to no avail.
They promise to walk this time. I am sure they will. My older niece
is working on losing weight. My younger niece is going to have a
gastric bypass done in September. She has lost 50 lbs so far... she
is 349 lbs and she has a heart problem. She plans to use the gym at
the hotel.. which I want to use too. Walking outside is great,
however I do like walking on a treadmill so I get a measurement of my
progress.
I may pop in - I'm still contemplating taking my laptop along. I
have a bunch of cleanup to do on it, which could be accomplished...
so I may pop in.

Keep Your Sunny side up !!!

Hugs to all
Mary M

I'm doing Flex also.  Well...I'm actually doing 123 Success (where you have a point range and bank points).  I like this angle of doing points rather than a weekly allottment of extra points.  I do pretty good during the week, but the weekends kill me.  I weigh in on Wednesday and I'm not counting a loss.  I gained 1 pound last week.  I'm crossing my fingers that a miracle will happen.

I am doing Flex.  How 'bout you?  You know what's sad?  I weighed 203 the day I delivered my twins.  They just turned 18.  Now I weigh that much with no babies.  :\  Okay.  I'm not going to think about that anymore.

I have been doing really well this week.  I finally started planning my food for a whole day at a time, instead of just winging it, and realizing I had hardly anything left for dinner.  This way is MUCH BETTER.

I weigh in tomorrow night.  Last week I gained a pound, which I think was due to PMS (sorry if there are any guys on here).  The week before that I lost 5.6.  That was my first week since I came back to WW.

I am so glad to meet you, and I hope we can cheer each other on along the way!!

ArrowRoot is used as a thickening agent rather than using flour or
cornstarch.

Here is a guide on how to use it:

Arrowroot Notes

NOTES about Arrowroot:
-- 1 T. arrowroot = 2 T. flour
-- 1 T. arrowroot = 1 T. cornstarch
-- Mix arrowroot with water, using twice as much water as arrowroot.
-- Use in ratio of 2 T. arrowroot + 1/4 cup water for every 2 cups
liquid to be thickened.
-- Remove from heat before adding arrowroot/water mixture to liquid.
Stir well.
-- Bring to boil over medium heat, stirring constantly. Boil 1 minute.
-- The thickening properties of arrowroot are reduced with long
cooking.

Slowcooker Enchiladas
6 servings = 7 Points Per Serving

1 lb ground beef
1 cup chopped onion
1/2 cup chopped green pepper
1 can (16oz) pinto or kidney beans, rinsed & drained
1 can diced tomatoes and green chiles, undrained
1 small can tomato sauce
1 pkg enchilada sauce (dry mix) (taco sauce mix works well too)
1/3 cup water
1/2 tsp salt
1/4 tsp pepper
1 cup (4oz) shredded low fat cheese
6 flour tortillas (2 points each)

In a skillet, cook beef, onion and green pepper until beef is
browned. Drain. In a bowl, add all other ingredients except for the
tortillas and stir. In a crockpot, layer about 3/4 beef mixture, then
a tortilla. Repeat layers with all 6 tortillas. Cover and cook on low
for 5-7 hrs or until heated thru. (you can also cut up tortillas and
stir into mixture)

I have nevered layered mine in ! ! the crockpot. I always cut my
tortillas up and stir into the mixture. Hope ya'll enjoy. This recipe
is a little spicy. I think next time I will use mild rotel tomatoes.

I think I got the Chicken Fagiole from the 3FC's Core recipe
section.

Crock Pot Chicken Fagiole
serves 6
(adapted from a Menu Mailer recipe)

2 tablespoons olive oil
1/2 cup onion -- chopped
3 cloves garlic -- minced
3 cups fat-free chicken broth
2 15-oz. cans stewed tomatoes
2 15-oz. cans great northern beans
2 cups whole wheat macaroni -- small, uncooked
1 tablespoon parsley -- chopped
1/2 tablespoon basil -- chopped
salt and pepper -- to taste
2 cups boneless skinless cooked chicken breast -- chopped

In a large nonstick skillet, heat oil over medium heat; add onions and
saute till tender. Add garlic and cook for another 2 minutes.
Add remaining ingredients and combine well. Transfer to crockpot
and cook on Low for about 6 hours. Option: Top with shredded fat-free
parmesan cheese.

SERVING SUGGESTIONS: A big green salad and a bowl of raw baby
carrots with your ! ! favorite dressing as a dipping sauce.

NOTES: I made this - I'd recommend not adding the pasta in the
beginning. Here's what I'd do... Cook the pasta as directed on the
stovetop about 20 minutes before serving. Then stir in to the crock
pot, let warm, and serve. Otherwise, the macaroni gets too squishy

5 Refreshing (and Guilt-Free) Summer Drinks
By Leslie Fink, MS, RD | 7/26/2002

There's something richly satisfying about an ice-cold shake on a
sizzling summer day — until you think about what it's doing to your
diet. But that doesn't mean you can't cool down with a frothy
beverage when the weather heats up.

Here are some easy ways to create your own signature summer drinks
that are delicious but won't ruin your weight-loss plan. Check them
out, then get started with the five favorites below …

For smoothies, combine yogurt with fat-free or low-fat milk.

Consider doctoring up seltzer water with a splash of juice.

Try adding soft tofu to your fruity blended shakes for a protein
boost.

Spruce up your favorite caffeine-free diet soda with a scoop of fat-
free ice cream or frozen yogurt.

Add ice to fruit-based smoothies (before blending them).

Popsicle Star
By Liz Yeh | 6/1/2005

Sweet ice on a stick — what's not to love about an ice pop? Well,
besides all the artificial flavors and colors, of course. But you can
stay cool this summer with your own, all-natural ice pops — no fake
colors or flavorings added. They're a snap to make, and the kids will
love you for it!

Here are a few of our favorites:

Berry-Melon Pops
Mango Peach Pops
Banana Pineapple Pops

Pop Tips
Virtually any liquid can be transformed into an ice pop: fruit juice,
soda, milk, lemonade — even coffee and tea. Freeze it plain or jazz
it up with puréed fruit, but be sure to use ripe fruit. It's so much
sweeter and more flavorful, you may not even need to add extra sugar.

You can buy popsicle molds at housewares and department stores.

Brownies - You are adventurous, love new ideas, and are a champion of underdogs and a slayer of dragons. When tempers flare up, you whip out your saber. You are always the oddball with a unique sense of humor and direction. You tend to be very loyal.
