ArrowRoot is used as a thickening agent rather than using flour or
cornstarch.

Here is a guide on how to use it:

Arrowroot Notes

NOTES about Arrowroot:
-- 1 T. arrowroot = 2 T. flour
-- 1 T. arrowroot = 1 T. cornstarch
-- Mix arrowroot with water, using twice as much water as arrowroot.
-- Use in ratio of 2 T. arrowroot + 1/4 cup water for every 2 cups
liquid to be thickened.
-- Remove from heat before adding arrowroot/water mixture to liquid.
Stir well.
-- Bring to boil over medium heat, stirring constantly. Boil 1 minute.
-- The thickening properties of arrowroot are reduced with long
cooking.
