Slowcooker Enchiladas
6 servings = 7 Points Per Serving
1 lb ground beef
1 cup chopped onion
1/2 cup chopped green pepper
1 can (16oz) pinto or kidney beans, rinsed & drained
1 can diced tomatoes and green chiles, undrained
1 small can tomato sauce
1 pkg enchilada sauce (dry mix) (taco sauce mix works well too)
1/3 cup water
1/2 tsp salt
1/4 tsp pepper
1 cup (4oz) shredded low fat cheese
6 flour tortillas (2 points each)
In a skillet, cook beef, onion and green pepper until beef is
browned. Drain. In a bowl, add all other ingredients except for the
tortillas and stir. In a crockpot, layer about 3/4 beef mixture, then
a tortilla. Repeat layers with all 6 tortillas. Cover and cook on low
for 5-7 hrs or until heated thru. (you can also cut up tortillas and
stir into mixture)
I have nevered layered mine in ! ! the crockpot. I always cut my
tortillas up and stir into the mixture. Hope ya'll enjoy. This recipe
is a little spicy. I think next time I will use mild rotel tomatoes.

Crock Pot Chicken Fagiole
serves 6
(adapted from a Menu Mailer recipe)
2 tablespoons olive oil
1/2 cup onion -- chopped
3 cloves garlic -- minced
3 cups fat-free chicken broth
2 15-oz. cans stewed tomatoes
2 15-oz. cans great northern beans
2 cups whole wheat macaroni -- small, uncooked
1 tablespoon parsley -- chopped
1/2 tablespoon basil -- chopped
salt and pepper -- to taste
2 cups boneless skinless cooked chicken breast -- chopped
In a large nonstick skillet, heat oil over medium heat; add onions and
saute till tender. Add garlic and cook for another 2 minutes.
Add remaining ingredients and combine well. Transfer to crockpot
and cook on Low for about 6 hours. Option: Top with shredded fat-free
parmesan cheese.
SERVING SUGGESTIONS: A big green salad and a bowl of raw baby
carrots with your ! ! favorite dressing as a dipping sauce.
NOTES: I made this - I'd recommend not adding the pasta in the
beginning. Here's what I'd do... Cook the pasta as directed on the
stovetop about 20 minutes before serving. Then stir in to the crock
pot, let warm, and serve. Otherwise, the macaroni gets too squishy
