Hi Dwayne,
When your wheatgrass begins to joint it means that all of the
nutrients are being synergized - meaning that after the jointing
process you will receive 100% of the nutrient value. People who do
not have WG juicers and chew their grass will cut the grass after it
an inch or so above the joint because the blades are most tender at
that point of growth.
The height of 6-7 inches is most common for cutting to gain an ample
about of juice from each tray. I get 16-18 ounces from 1 nursery
tray. I was taught to use a cutting blade or scissors and cut at the
soil level.
