I use organic soil purchased from Walmart.
My trays and purchased new for every growth - I never wash them, but discard
(recycle) after every use. I actually drill (many) holes in the tray put
this tray in another tray separated by 3-4 PVC pipes. I can then water and
not worry about "too wet". I was getting mold really bad and couldn't tell
if I was over-watering. Having the tray "drip" into another keeps the soil
just right. Since using H2O2 and soaking for 6 hours, then planting, I don't
get mold. But perhaps because it is not as humid as it was this summer. I
would also check your seeds. I have been considering ordering a sample pack
from all the major seed Co's and testing each one. Perhaps some of the
members on this list can say where they purchased theirs and if it is good
quality.
I buy mine from wheatgrasskits.com. I sent a message to "The Sproutman" and
asked some basic questions and all I got back was some big marketing message
stating that theirs was the best seed and then trying to market other
products. I don't like that - not very helpful. if they had come back saying
with some help and suggesting to use one or two of their products, I'd
probably have done it. Wheatgrasskits.com are great. Fast in response and
shipping and their products yields good grass.
I also keep a fan in the early stage (doesn't help when the grass 3 inches
tall). I usually water the grass once per day - over-water and let it drip
through the holes. The water contains kelp and GSE. This is sprayed on in
the sprout stage too. I believe if too much mold develops early, it can grow
throughout the cycle. I've also been experimenting sprouting and rinsing
(with H2O2) until the sprouts are an inch long, but this takes a day or 2
longer for the roots to get into the soil.
My grass grows a funny way, almost in 2 stages. I get an 2-3 inch blade over
50% coverage. It looks like half of them didn't sprout. Then 2 days later
the next lots sprouts up to the same level and covers the soil 100% - I
can't see the soil.
That's my recent experience.

Regarding the last few messages on nutrition I recall reading
Meyerwitz's book and noticing that he says early on if you want
maximum nutritional output one should grow in soil. He does not use
soil as I recall.
On mold:
I have had more bad mold this summer than any time in the past (going
on) 3 years. I am now at the stage in believing it comes from my
compost. I have not limed until last month and believe that the moldy
trays that have built up over the past have contaminated the compost.
I have not been able to sustain good worm growth for the whole summer
quite unlike the previous summer. They seem to disappear and the soil
does not seem to smell healthy for an extended period of time. There
is some relief of this situation if I turn the soil on a regular
basis ( every other day or so) I do use AZOMITE and table scraps.
I DO NOT, however, HAVE ANY MOLD IN GROWING SUNFLOWER OR OTHER GREENS
USING THE SAME SOIL AND TRAYS. My question: How much mold can be
attributed to seed and how much to the growing factors.I have used
H2O2 with some success and I have washed the trays with a bleaching
solution. A good rinsing and spin drying before juicing has been a
way out but would
like to get back to NO MOLD.
DOES ANYONE HAVE THE SAME PROBLEM and hopefully a solution
