It depends on your honing skills and (here it is) your preference. I can
achieve a nice edge that I like using simply an 8000 grit for the final
stroke. Others that I've honed for prefer me to take it to a 10000 grit
stone. Some will even use a 16k and 30k paste once they get it back from
honing. I've heard it said that at one point the finer grits switch from
actually metal remove to simple metal polish, taking off the grime within
the grooves of the metal itself. At what exact point this happens I guess
would depend on the metal, it's hardness, and other factors.

But for me I'll hone to an 8000 grit stone, and sometimes a 10000 grit stone
but I haven't noticed a huge difference over several razors. I had a razor
honed by Lynn Abrams that went a year before I wasn't happy with it's shave
and he honed it up to 8000 grit. I've had razors I've honed go a year with
similar results and other razors I've honed need a touch up after just a
couple months. At first I thought it was my honing techniques but then I
realized it was the metal hardness, etc.

While this isn't a direct answer I hope it helps you choose your own
preference :).
