Diabetic Recipes - Modenese Pork Chops - carbs: 0.9g  (stovetop)

   4        tablespoons  butter
   4                     pork chops  (1 inch thick)
      1/2           cup  dry white wine
   1           teaspoon  salt
      1/8      teaspoon  fresh ground black pepper
      1/2      teaspoon  crushed dried rosemary
   2             cloves  minced garlic

In a large skillet, melt butter over medium heat.  Cook chops in
butter, turning once to brown evenly.  Pour in wine, and season with
salt, pepper, rosemary, and garlic.  Simmer, uncovered, for 20
minutes, or until the chops are tender.  Transfer pork chops to
serving plates, and spoon sauce over the meat.   Calories: 293.
Total Fat: 19.2g;  Cholesterol: 89mg;  Sodium: 734mg;  Total

Hi!

I am new to the group and would like to introduce myslef to the group.

My name is Debbie, I am disabled and 51 living in Philadelphia,
Pennsylvania. Not much to say about myself but here goes.

Besides cooking and baking I love to do crafts of all kinds. I would
like to learn one stroke painting and digital graphics I would like
to make things like candy wrappers. Not to good with the digital
programs.lol

I have a 4 legged baby named Tommy. He is an orange and white cat
with alot of personality. I have never seen a cat like him before. He
loves for you to hug and kiss him and he loves company. When someone
knocks on the door he will knock you over to get to the door. Haven't
been able to teach how to open it yet. Just what I need

I hope to get to know everyone and exchange recipes and conversation.

The New York Times Food and Dining Section talked about Famous Recipes today in this article about the rise of populism in cooking.

DOES HER OWN CHOPPING Paula Deen, above, brought Southern home cooking to the Food Network. "The Taste of Home Cookbook" is one of the best-selling cookbooks of the year.

It was the year the people took back the food. Expertise was out: the Food Network edged aside chefs like Mario Batali to make room for home-cooking queens like Paula Deen, Sandra Lee and Rachael Ray. The most popular new food magazines and cookbooks were collections of recipes from real home cooks (or those who pretended to be), often stamped with the irresistible words "home-style," "country" and "everyday."

And one of the Web's most popular independent food blogs, according to data collected by Alexa, a Web information company, was an undiscriminating one titled World Famous Recipes. Bill Austin of Scottsdale, Ariz., collects recipes and recipe links at famousrecipes.wordpress.com, presenting them unedited and without comment. The site's motto: "Famous and not so famous recipes — who are you to decide? Who am I to decide?"

Today's home cooks want to decide for themselves, or learn from others like them.

"When you have the Internet, who needs cookbooks?" said Amy Cisneros, an avid cook from San Antonio. "I look at all the different recipes, and then I make it my way."

   Makes: 48 mini muffins
Preparation Time: 10 minutes
Bake Time: 15 minutes
Cool Time: 10 minutes

  2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup light butter, softened
1/3 cup SPLENDA® Sugar Blend for Baking
1/3 cup packed SPLENDA® Brown Sugar Blend
1 teaspoon vanilla extract
3 medium ripe bananas, mashed
1 large egg
1 (12-ounce) package NESTLÉ TOLL HOUSE Semi-Sweet Chocolate Mini
Morsels

  PREHEAT oven to 350° F. Spray 48 mini-muffin cups with nonstick
cooking spray; set aside.

COMBINE flour, baking powder and salt in medium bowl; set aside.

COMBINE butter, SPLENDA® Sugar Blend for Baking, SPLENDA® Brown Sugar
Blend and vanilla in large bowl; beat at medium speed with a mixer
until creamy. Beat in bananas and egg. Gradually mix in flour
mixture; stir in morsels. Spoon batter evenly into prepared pan,
filling cups 2/3 full.

BAKE 15 to 20 minutes or until wooden pick inserted in center comes
out clean. Cool 10 minutes in pans on wire rack. Remove muffins from
pans to wire rack to cool completely.

Yield: 12 Servings

Nonstick Cooking Spray
1/4 c Graham-Cracker Crumbs
1 pk 8oz Light Cream Cheese
1 pk 15oz Reduced-Fat Cottage Cheese
3/4 c Unsweetened applesauce
2 Eggs
1 1/2 t Vanilla Extract
1/2 t Grated Lemon Peel
1/4 t Salt
1 pt Strawberries

Cover outside of 8x3" springform pan with foil (to prevent mixture
from leaking during baking). Spray pan with nonstick cooking spray,
then evenly sprinkle graham-cracker crumbs in bottom; set aside.
Preheat oven to 350F. In food processor with knife blade attached,
blend light cream cheese and next 7 ingredients until smooth.
Carefully pour cheese mixture over crumbs in pan. Bake 45 minutes.
With oven door closed, turn off oven; let cheesecake remain in oven
30 minutes. remove; cool in pan on wire rack 30 minutes. Cover and
refrigerate cheesecake at least 4 hours or until well chilled.
To serve, carefully remove cheesecake from pan. Slice strawberries;
arrange on top of cheesecake.

Veggie Filled Burgers

2 TB milk
1/2 cup carrot, finely shredded
1/4 cup green onions, finely sliced
1/4 cup soft whole wheat bread crumbs
1/4 tsp. dried Italian seasoning, crushed
1/4 tsp. garlic salt
Dash pepper
3/4 lb. lean ground turkey or chicken
1/4 cup Dijon mustard
1/2 tsp. curry powder
4 whole wheat or white hamburger buns, split and toasted
Lettuce leaves, optional
Shredded or thinly sliced zucchini, optional
Sliced tomatoes, optional
Curry mustard, optional

1. Stir together milk, carrot, green onions, bread crumbs, Italian
seasoning, garlic salt, and pepper
in a medium mixing bowl. Add ground turkey; mix well. Shape the
mixture into four 1/2" thick patties.
Lightly grease the grill rack.

2. For a charcoal grill, place patties on the greased grill rack
directly over medium-hot coals. Grill,
uncovered, about 12 minutes or until an instant-read thermometer
inserted into the side of a patty
registers 165º F., turning once.

3. For a gas grill, preheat grill. Reduce heat to medium-hot. Place
patties on grill rack; cover and
grill patties as directed in step 2.

4. Meanwhile, stir together mustard and curry powder.

5. Serve patties on buns topped, if desired, with lettuce leaves,
zucchini, sliced tomato, and curry
mustard mixture.

Makes 4 servings.

BANANA SPLIT PIE
1 graham cracker crust
1 (4 oz.) pkg. sugar-free instant vanilla pudding mix
2 c. low-fat milk
2 bananas, sliced
1 (15 oz.) can crushed pineapple
1 c. diet Cool Whip
1 tsp. vanilla
1/2 c. pecans, chopped

Mix pudding with milk and beat until thick, pour into crust. Put
bananas over pudding. Squeeze pineapple to remove all juice.
Sprinkle on top of bananas. Cover with Cool Whip, sprinkle pecans on
top. Chill well

1 jar (28 oz.) pasta sauce
1 can (14 oz.) vegetable broth
2 cups sliced zucchini
1 cup arborio rice
1 can (4 oz.) sliced mushrooms, drained
2 cups (8 oz.) shredded mozzarella cheese

1. Preheat oven to 350° F. Spray 3 quart casserole with nonstick
cooking
spray.

2. Combine spaghetti sauce, broth, zucchini, rice and mushrooms in
prepared dish.

3. Bake, covered, 30 minutes. Remove from oven and stir casserole.
Cover and bake 15 to 20 minutes more, or until rice is tender.

Remove from oven; sprinkle evenly with cheese. Bake, uncovered,
5 minutes or until cheese is melted.

Yield: 6 servings.

Lemon-Garlic Halibut Steaks

vegetable oil for grilling
1/4 cup lemon juice
1 tablespoon olive or vegetable oil
1/4 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, finely chopped
4 halibut or tuna steaks, about 1 inch thick (about 2 pounds)
1/4 cup chopped fresh parsley
1 tablespoon grated lemon peel

Brush grill rack with vegetable oil. Heat coals or gas grill for
direct heat. In shallow glass or plastic dish or resealable plastic
food-storage bag, mix lemon juice, oil, salt, pepper and garlic. Add
fish; turn several times to coat. Cover dish or seal bag and
refrigerate 10 minutes.
Remove fish from marinade; reserve marinade. Cover and grill fish
over medium heat 10 to 15 minutes, turning once and brushing with
marinade, until fish flakes easily with a fork. Discard any remaining
marinade.
Sprinkle fish with parsley and lemon peel.
Makes 4 servings.

I have gettin a magazine called Diabetic Cooking and there are lot of
recipes in it that are for only two people.  If you cut in half you
would have for 1.  Go ahead and make the one for two, eat one, put the
other in the freezer and put a date on it so you will know when to get
out and eat it.

INGREDIENTS

- 2 hard-cooked large eggs, cooled under running water
- 2 teaspoons fat-free sour cream
- 1 teaspoon sweet pickle relish
- 1 teaspoon reduced-fat mayonnaise
- 1/8 to 1/4 teaspoon Dijon-style mustard
- Pinch salt (optional)
- 2 tablespoons finely chopped celery

DIRECTIONS

Cut each egg in half. Carefully remove the yolks.
Discard one yolk.

In a custard cup, mash the remaining egg yolk. Add the
sour cream, pickle relish, mayonnaise, mustard, and salt
(if desired). Stir to mix well. Stir in the celery.

Serve at once, or cover and refrigerate. Deviled eggs will
keep in the refrigerator 1 to 2 days.

- 1/2 cup diced carrots
- 2 medium tomatoes, diced
- 1 cup canned kidney beans, drained
- 2 green onions, minced

Dressing:

- 2 tablespoons lemon juice
- 2 tablespoons red wine vinegar
- 1/4 cup olive oil
- 1/4 cup minced basil
- 2 tablespoons minced Italian parsley
- 2 teaspoons sugar
- Fresh ground pepper and salt to taste

DIRECTIONS

Combine the salad ingredients in a large bowl.

In a separate bowl, whisk together the dressing ingredients.

Add dressing to salad and toss well. Chill for 1-2 hours.

DIRECTIONS

Combine all ingredients in a large saucepan. Bring to

DIRECTIONS

Combine 3 cups coconut with peanut butter and vanilla extract.

Meatloaf Recipes



Yield: Makes 6 servings.

Ingredients

- 1/3 cup coarsely chopped pecans, toasted
- 3 Tbsp. extra virgin olive oil
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. apple cider or apple juice
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground ginger
- 1/2 tsp. honey, or to taste
- Salt and freshly ground black pepper, to taste
- 2 Gala apples
- 12-16 leaves (depending on size) dark leafy green
or red lettuce, washed and dried
- 1/2 small red onion, peeled, halved and thinly sliced (1/8-inch)
- 1 small fresh fennel bulb, trimmed, thinly sliced

Directions

Toast pecans in a skillet over high heat until they take
on a slightly toasted taste, occasionally stirring or
gently shaking the pan to avoid burning. Depending on
the skillet and intensity of heat, this takes only a
few minutes. (The nuts can also be toasted on a baking
sheet in a preheated 400-degree oven for about 5 minutes;
watch nuts carefully to avoid burning.) As soon as the
nuts are toasted, immediately transfer them to a small
bowl and set aside.

Prepare vinaigrette. Combine in a blender (or a bowl
with a whisk) the oil, vinegar, cider, nutmeg, ginger,
honey, salt and pepper. Taste and adjust amount of salt
and pepper used, if desired.

Core, seed and cut apples into thin slices. To prevent
them from discoloring, place slices into a bowl containing
water and a small amount of lemon juice.

Arrange 3 to 4 lettuce leaves on each of 4 salad plates
to make a bed for apple/fennel mixture. Stems of lettuce
leaves should be at the center of the plates.

Drain apple slices and pat dry with paper towels.
Alternating slices of apple, onion and fennel, arrange
the three ingredients over the lettuce. Sprinkle with
pecans. Re-blend vinaigrette and drizzle over salads,
or transfer dressing to a cruet or small pitcher to
serve with salads.

INGREDIENTS

- 2 large egg whites
- 1/4 teaspoon cream of tartar
- 1/3 cup sugar substitute
- 1 teaspoon almond extract
- 2-1/4 cups grated coconut


DIRECTIONS

Preheat oven to 375 degrees F. Place the egg whites and
cream of tartar in a large bowl. Beat until stiff peaks
form. Continue beating, adding the sugar substitute. Fold
in the almond extract. Then fold in the grated coconut.
Mixture will be stiff. Drop by teaspoonful onto a nonstick
cookie sheet. Bake 20 minutes. Remove macaroons to a wire
rack to cool. Cookies will be 1" in diameter.

INGREDIENTS

- 1 cup dry bulgur wheat
- 1-1/2 cups boiling water
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon salt, or to taste (optional)
- 2-3 drops hot pepper sauce (optional)
- 1/4 cup sliced green onion tops
- 2 tablespoons fresh mint leaves or 1/2 teaspoon dried mint
- 1/2 cup coarsely chopped fresh parsley
- 1 large tomato, diced
- 1 small cucumber, peeled, seeded, and diced

DIRECTIONS

In a large bowl, combine the bulgur and boiling water.
Cover and let stand 15 to 20 minutes, until the bulgur
has softened and most of the water has been absorbed.
Drain in a sieve. Return the bulgur to the bowl.

Add the lemon juice, oil, garlic, salt (if desired), and
hot pepper sauce (if desired). Stir to mix well. Stir in
the onions, mint, parsley, tomato and cucumber. Stir the
vegetable mixture into the bulgur.

Serve at once, or cover and refrigerate several hours.
Stir before serving. Leftover tabouli will keep in the
refrigerator for 2 to 3 days.

- 3/4 pound large scallops
- 1/2 tablespoon flour
- 1/2 cup dry vermouth
- 1/2 cup fat-free reduced-sodium chicken broth
- 2 tablespoons heavy cream
- Salt and freshly ground black pepper, to taste

DIRECTIONS

Heat oil in a nonstick skillet over medium-high heat.
Add scallops and saute 2-1/2 minutes on each side.
Remove scallops to a plate and add flour to pan.

Add vermouth to the pan, raise heat to high, and reduce
liquid by half, about 1 minute. Add chicken broth and
reduce by half again, about 1 minute. Remove from heat
and stir in cream. Add salt and pepper.

Return scallops to the pan just to warm through,
about 1/2 minute, and serve.
