Hearty Tuna Casserole
3 cup wide noodles
12 oz tuna in water, canned drained and flaked
1 cup shredded zucchini
3/4 cup light sour cream
1 celery rib thinly sliced
1/4 cup chopped onion
1/4 cup light mayonnaise
2 tsp mustard
1/2 tsp thyme
1/4 tsp salt
1 cup shredded lowfat mozzarella cheese
1 medium tomato chopped
Cook noodles according to package directions; drain. In a
bowl, combine the noodles, tuna, zucchini, sour cream, celery,
onion, mayonnaise, mustard, thyme, and salt; mix well. Spoon
1/2 into 2 quart baking dish coated with cooking spray.
Sprinkle with 1/2 of cheese. Repeat layers. Top with
tomatoes. Cover and bake at 350 degrees F for 30-35 minutes.
Uncover, bake 5 minutes longer.
