Asparagus with Tomato and Onion

Serves 4
Ingredients
1 1/2 lb asparagus, trimmed
1 small sweet onion, minced
3 tbsp fat free vinaigrette salad dressing
2 tbsp snipped fresh chives, divided
2 tomatoes, peeled, seeded and diced
Directions
1 Bring a pot of salted water to a boil. Add asparagus and cook until
barely tender (about 5 minutes).
2 Transfer to ice water and cool. Drain; dry on paper towels.
3 Arrange asparagus on a serving platter. In a bowl stir together
onion, vinigrette and half of the chives. Stir in Tomatoes and season
with salt and pepper. Spoon over asparagus. Garnish with remaining
chives. Serve at room temperature.
