Watercress, Red and Green Leaf Rice

Serves 6
Ingredients
1 tbsp Olive oil
1 tbsp minced Garlic
11/2 cups chopped Watercress
1 cup chopped arugula
1 cup long-grain rice cooked
1 1/2 cups julienned radicchio
1 tbsp chopped fresh Italian parsley
Directions
1 Heat oil in a large skillet over medium heat. Saut`e Garlic,
watercress, and arugula for 3 minutes or until wilted slightly.
2 Add rice and remaining ingredients to skillet until heated. Season
to taste with salt and pepper,
3 Toss well and serve
