Re: [rosacea-diet-users-support-group] rosacea diet

Hi Nate

I make my own mayo. Here's a kind of rough recipe:

Egg yolk(s) in a tall container (number of yolks depends on how much you want to
make)
Using a hand held 'whizzer', VERY slowing add extra virgin olive oil until a
thick consistency is reached
Add lemon juice to taste
Add sea salt and ground black pepper to taste
You can also add other spices for flavour (eg. Paprika)

This recipe is very much down to your own taste buds. As you slowly add the
ingredients, taste test to see if you want more of something.

Add crushed garlic to make it an Aioli sauce.

Black pepper and paprika used to scare me, as far as Rosacea goes, but no
longer. It's only a very small amount in the recipe but you can leave them out
if you like. You can also substitute with other spices that you like, if you
want to.

Nutritional value:
One large egg yolk contains 0.303g of carbohydrate, 2.85g of protein and 5.25g
of good fat.
Extra Virgin Olive Oil contains 13.5g of good fat in one tablespoon.
Juice from one lemon (2 1/8" diameter) contains 4.06g of carbs.
Sea salt contains many naturally occurring minerals which are good for us.
Garlic is just plain good for us, if you decide to go for the Aioli version.

I get the nutritional value of foods from www.fitday.com which is free to join.
I found it to be a really good tool when first starting out, so that I knew
which foods were the best choice to give me low carbs etc.

So, in the scope of 30g of carbs a day, this would be a low carb condiment. Not
sure that you would eat it all in one sitting either, so you can keep it in the
fridge for another day.

Hope this helps.

Jen
