Hello!

I've been making kombucha for a while now and we've really been enjoying it. 
I've been using Wholesome Sweeteners evaporated cane sugar, because it's
organic, fair-trade, and not chemically processed, but I understand the old,
refined, chemical-laden variety makes the best kombucha.  It's time for me to
buy more sugar (I buy in bulk throught UNFI), so I thought I'd get some advice
on what sugar to use.  I guess it's likely that the health benefits of kombucha
would counteract the negative effects of the chemicals in refined white sugar;
is it possible to get fair-trade white sugar?  Any other thoughts?

Jean. Yes, you can get organic FT white sugar.  But I also know that some folks
use plain non organic white sugar as well.

Either will work fine.

I am making a run towards Rochester way with a load of ground beef (in bulk, thin patties, and thick patties), stew, beef, shaved steak, beef cutlets, meaty soup bones, various "fresh" ( as in not cured or smoked but still frozen) pork items, on Saturday June 7th. I will meet people in the usual Ontario Center parking lot to drop meat to them from 11:00 to 11:30.
I will post prices on my website, as listed below in my signature. 
You must email me to let me know what you want me to bring for you.
I will give you the "address" of the parking lot at that time.
Briefly, I am offering the ground beef special again for 25# for $100. Stew and other beef items at $5 a pound. Soup bones at $3 a pound. Pork items vary in price.

Good morning all.  I wanted to let you know that Jen Reschke and I will be coming to you "live" this morning at 10 am from the Michael Warren Thomas radio show - "For the Love of Food".  You can also find this segment at www.savorlife.com

 

We are broadcasting live from the NOFA conference in Saratoga Springs.  Michael wanted to do a feature on "Weston A Price - who was he, what was his work, what is his connection to good food , what is the Foundation… and more ".

Harvard Law School Food Law Society Hosting a Raw Milk Debate

 

At one time, everyone drank raw milk. But with the invention of pasteurization and its alleged safety benefits, consumption of raw milk in this country almost completely disappeared. In fact, in some states it is illegal to sell raw milk. But a growing segment of the population is clamoring for increased access to raw milk, citing its nutritional benefits and recently discovered inbuilt safety mechanisms. Opponents are skeptical of such nutritional claims and believe the safety risks of unpasteurized milk are simply too high.

 

Join the Food Law Society as we present a debate covering the legal, health, and nutritional merits of raw milk. The participants are:

I have had a few people ask me about what is the recommended amount of milk to drink & how I do so in creative ways.  Rather then address each individually am doing so on this note.  This is what I teach at the workshops:
 
Weston A. Price Foundation recommends a min. of 3 glasses per day for a non preg./nursing/health issues. 
This is based upon a couple of things:
1. Doctors & practitioners in the WP foundation have found this best maintains excellent overall health.  ( I can attest to this antidoc. - my son eats alot of crap - diet very high in sugar/cereals etc.  But he has no tooth decay - he drinks alot of milk with his crappy cereals.  (he is 17 and half).  Before my family had raw milk we had high carb diets - all of us with LOTS of  on-going cavities and all kinds of other issues.  Now my son has a even worse diet - and still no cavities!)  My husband and I eat way better and we haven't needed a dentist in over 6 years.  (Sorry Brad & Carol & Heather - my dentists who would still wish I would get my butt in the chair.)
 
2.  The research shows that supplementation of calcium products  even when combined with other elements still gets excreted in high amounts - meaning is not absorbed  because again there is so much synergistic effects in a whole food that no supplement can do justice to and that  science has yet to discover and try to replicate whch it never will- cna't beat Mother Nature!.  So ditch your supplements - they aren't effective - waste your money - except for the placebo effect.  For me since I am menopausal - it is very critical to have these min. of 3 glasses to maintain bone density.
 
3.  Weston Price himself in all the research and travels he did (which was so excellent that Harvard Univ.  required his book for Anthropology 101) found that the 14 perfect health cultures and tribes had raw milk or a bone broth or both at each  of 3 meals that met the needs for good bone formation and ongoing foundation.
 
So here is my fun way that I look forward to having my milk daily at each of my 3 meals.  Milk for me is truly one of my greatest daily pleasures- Tim our farmer knows this - if I had one food left it would be milk- I would get me a cow for sure!
 
Breakfast:  LATTE!!!  Yeah!  I warm 1 cup of milk - toward the hot side - & pour in 1/4 or bit more of de-cafe coffee - the Biodynamic brand at Lori's cafe Altura - a blue can on end cap.  Then I add in either 1T. coconut oil or heavy creme.
 
Lunch:  for dessert - my husband & my favs:  Cherry Kefir:  1 c. each kefir ( I have extra kefir grains if in need of one - this is so simple stupid to make their are no excuses!)  then add to each serving:  splash of black cherry concentrate(at Loris') some frozen cherries, pinch stevia, drop or 2 of vanilla. 
 
Supper:  I love a fresh glass of milk with my dinner or I have OVALTINE!!  Remember that one as a nice nursery comfort food?.  Only I have made it new and improved!  1 cup warm milk, 1 t. of Eden brand Barley Malt Syrup(this is at Lori's in honey section.  Is awesome product - is Biodynamic product - made from sprouted fermented barley.)  Can add a little vanilla 1-2 drops.  This is a fantastic drink if you can't sleep at night - the ingredients in the milk & barley have great sleep enhancing elements.
 
Ok everyone hope I have inspired you and helped you to appreciate how lucky we are to have the source of milk that we do from our farmers.  Soo many people do not!

Teacupfarm.net is a very small farm with Fresh cow milk, where you can own part of YOUR cow.
This is our 5th year with a NYS permit to sell both cow and goat milk. Goat is seasonal.
THis all started as I am a MILKOHOLIC.. Don't have to get me to drink my milk, LOVE IT!
I am testimony to the tooth decay battled it my whole life till I start drinking raw milk,
going on 10 years no cavities..

I know that the conventional thinking (modern medicine) is for pregnant women to avoid raw dairy.  Is WAPF in agreement with this?  I was reading about how a newborn baby inherits (somewhat?) the mother's gut flora, and my wife and I are weighing out the pros & cons of her drinking or not drinking the real thing during her pregnancy.  Do you have any thoughts you can share on this?

2.  The research shows that supplementation of calcium products  even when combined with other elements still gets excreted in high amounts - meaning is not absorbed  because again there is so much synergistic effects in a whole food that no supplement can do justice to and that  science has yet to discover and try to replicate whch it never will- cna't beat Mother Nature!.  So ditch your supplements - they aren't effective - waste your money - except for the placebo effect.  For me since I am menopausal - it is very critical to have these min. of 3 glasses to maintain bone density.
 
3.  Weston Price himself in all the research and travels he did (which was so excellent that Harvard Univ.  required his book for Anthropology 101) found that the 14 perfect health cultures and tribes had raw milk or a bone broth or both at each  of 3 meals that met the needs for good bone formation and ongoing foundation.
 
So here is my fun way that I look forward to having my milk daily at each of my 3 meals.  Milk for me is truly one of my greatest daily pleasures- Tim our farmer knows this - if I had one food left it would be milk- I would get me a cow for sure!
 
Breakfast:  LATTE!!!  Yeah!  I warm 1 cup of milk - toward the hot side - & pour in 1/4 or bit more of de-cafe coffee - the Biodynamic brand at Lori's cafe Altura - a blue can on end cap.  Then I add in either 1T. coconut oil or heavy creme.
 
Lunch:  for dessert - my husband & my favs:  Cherry Kefir:  1 c. each kefir ( I have extra kefir grains if in need of one - this is so simple stupid to make their are no excuses!)  then add to each serving:  splash of black cherry concentrate(at Loris') some frozen cherries, pinch stevia, drop or 2 of vanilla. 
 
Supper:  I love a fresh glass of milk with my dinner or I have OVALTINE!!  Remember that one as a nice nursery comfort food?.  Only I have made it new and improved!  1 cup warm milk, 1 t. of Eden brand Barley Malt Syrup(this is at Lori's in honey section.  Is awesome product - is Biodynamic product - made from sprouted fermented barley.)  Can add a little vanilla 1-2 drops.  This is a fantastic drink if you can't sleep at night - the ingredients in the milk & barley have great sleep enhancing elements.
 
Ok everyone hope I have inspired you and helped you to appreciate how lucky we are to have the source of milk that we do from our farmers.  Soo many people do not!

Brian,
I want to say with my oldest 2(13 AND 10) I did not drink or eat raw dairy. With my youngest 2 (4 adn 2) I did.  The youngest two by far have healthier teeth.
I also had a miscarriage in between my 2 and 4 year old.  My midwife had more miscarriages the months of Nov/Dec 2008 than in several years of midwifery. I am skeptical to blame raw milk for that.  I'm wondering what kiind of enviromental factors could have caused that...like testing old gas wells or injecting into gas wells..etc...

I know that the conventional thinking (modern medicine) is for pregnant women to avoid raw dairy.  Is WAPF in agreement with this?  I was reading about how a newborn baby inherits (somewhat?) the mother's gut flora, and my wife and I are weighing out the pros & cons of her drinking or not drinking the real thing during her pregnancy.  Do you have any thoughts you can share on this?

I have had a few people ask me about what is the recommended amount of milk to drink & how I do so in creative ways.  Rather then address each individually am doing so on this note.  This is what I teach at the workshops:
 
Weston A. Price Foundation recommends a min. of 3 glasses per day for a non preg./nursing/health issues. 
This is based upon a couple of things:
1. Hello,

I am also interested in anyone's thoughts on Brian's question regarding whether
or not a pregnant woman should drink raw milk during pregnancy, as my wife and I
have had the same discussion with no final decision for ourselves.

Also, I have had a question that has been nagging me for a while.  I am
completely convinced raw dairy is ideal.  However, when I am not able to
purchase raw milk or not ultra-pasteurized cream for instance, am I better off
buying a low fat version of one of these or am I still better off purchasing
whole milk, no reduced fat?  My limited understanding of the benefits of raw
milk is that it has enzymes in it that help put the fat to good use, so does
that mean pasteurized milk does not have those enzymes and so it is pointless to
buy whole when that is your only option?

Ben, all – whole milk is always best.  We need the fats in milk (or any food) in order to make best use of the minerals that are in that food.  Many folks are deficient in the fat soluble vitamins (because, in America we are encouraged to avoid fats), and thus, when they start to add in these good fats (whether through cod liver oil,etc)  they notice some good changes.  That is most likely due to the fact that all of those good minerals they were taking in through their foods are now able to be utilized by the body for energy, recovery,etc…. because the fat soluble vitamins (A, D,E, K) are now activating the system and getting the minerals into action.  Many people see positive changes from cod liver oil when no other dietary changes are made.  This again goes back to the fat soluble vitamins helping utilize the minerals that were already present.

 

If you review the powerpoint presentation that is on realmilk.com, you and your wife might enjoy that.  There is a lot of safety and nutritional info in it.  It is likely ‘the safety” part of it that makes you take pause and contemplate this during a time of pregnancy.

I guess the other thing we need to remember… we all came from mothers or grandmothers or great grandmothers that drank fresh milk.

 

As always, you want fresh milk from a quality source. I am sure you know the importance of that.

Hello,

I am also interested in anyone's thoughts on Brian's question regarding whether or not a pregnant woman should drink raw milk during pregnancy, as my wife and I have had the same discussion with no final decision for ourselves.

Also, I have had a question that has been nagging me for a while. I am completely convinced raw dairy is ideal. However, when I am not able to purchase raw milk or not ultra-pasteurized cream for instance, am I better off buying a low fat version of one of these or am I still better off purchasing whole milk, no reduced fat? My limited understanding of the benefits of raw milk is that it has enzymes in it that help put the fat to good use, so does that mean pasteurized milk does not have those enzymes and so it is pointless to buy whole when that is your only option?

Ok somehow I can never remember to send a reply to the whole group!  So here's a
recap of what I accidentally sent privately...

Last summer when my younger son was about 1.5yrs old his teeth were very crooked
and overlapped.  Even though my kids are sensitive to dairy I went to Liz's farm
and got some goat milk.  After about 2 weeks (or less, I wasn't actually paying
attention) of goat milk smoothies his teeth were straight!  AND after the first
few days he started sleeping through the night for the first time EVER.  Before
that he would be up many times a night to nurse.  I didn't try it with these
results in mind, that's just what happened.  Unfortunately the kids started
showing digestive problems due to their sensitivity so I stopped.  Too bad
because I really SAW they were benefitting from such nutrient rich milk!

When my daughter, age 30, was pregnant in 2010 she followed the WAPF
recommendations throughout her pregnancy.  Extra cod liver oil, plenty of
pastured eggs, and she drank about a quart of raw milk daily.  It was the
healthiest she had ever been!  Of course, she dared not mention to her doctor
about the raw milk!  My granddaughter arrived to the world a healthy baby, and
now at 18 months she loves raw milk too.

hI.
I am really not good at pre-planning.....which requires thawing of meat at room
temp.  So, could someone please fill me in on why thawing in hot water is a bad
idea ?  I know thawing in cold water is OK....I am guessing it has something to
do with killing something in there that is good.....but when you heat the meat
to cook it, aren't you killing the something good then as well?

Julee – It is really more of an issue of food safety…. Not having a portion of the meat get into the “bacteria temperature zone”.  If putting in hot water, then part of the meat is warm and the center may still be cold.


Here is a link about thawing.  As you said, it is a matter if pre-planning.  I do find that cold water thawing works pretty well.  I wouldn’t recommend microwave use, even though many food safety web sites will mention that as an option.

I have seen these "snack" options in the Wegmans health section of snack foods.
They are bowls that consist of greenbeans, onions, carrots and a few other
vegtables that seem dried out. The company who makes them is Creative Snack Co.I
have tried to see how they were made but having NO luck.  I just dont know how
healthy they are as an alternative for snacking.

I do have a dehydrator waiting to be used again and wondering HOW these snacks
can be prepared like those OR if those above are somehow made in a way we cant
make them at home OR unhealthy.

Has anyone seen them? Does anyone have any idea how they are made? Lastly, does
anyone have some nice recipes or a good website to dehydrate some goodness to
snack on?

I am not sure if I have seen these exact items, but I have likely seen something similar.  I think some of them have some vegetable oils in them…not sure if these do.  Since vegetable oils can go rancid easy, I have usually shied  away from buying them.

 

Dehydrating is easy to do.  I don’t have any particular website to share, but, I am sure that there are a lot of sites with info on recipes,etc.    An option with home dehydrating…if you like the crunch of dehydration, but also want the fat that comes with the store bought items, you can add your own oil…olive,etc… for a better option than the store ones. And, use sea salt instead of the ‘perhaps’ refined salt that might come in a store brand.

This coming weekend is my next planned meat drop.
I will be in Ontario Center (10 minutes east of Webster) on Saturday morning at 11:00, hoping to clear out of there by 11:30, for the Rochester area folks.

I will be in Baldwinsville in the Tops parking lot on Downer St on Sunday afternoon at 2:00, clearing out of there by 2:30, or Syracuse and points east of me.

As always, folks are always welcome to come to the farm, just contact me ahead of time so we don't disappoint you by being unavailable when you get here.

I will again be offering 25# of ground beef for $100 from our certified organic 100% grass fed and finished beef herd. I have a small variety of some other beef and veal items and also some pork from our certified organic pasture raised pork herd. 

Whatever it is you want you must let me know so I bring it with me and let me know which location you will meet me at to pick it up. No deposit required, just your order.

Hello to all.   The Rochester Chapter of the Weston A Price Foundation is hosting a chapter event on Wednesday March 14th  on the topic of....

 

"Nourishing Our Children"  

 

It will be a great session for anyone wanting to understand how to optimally nourish their children....including the core dietary principles of what foods to focus on.  It is true that we can be well-fed and yet malnourished at the same time.  The information is pertinent for nourishing children of all ages  … and even nourishing ourselves, as adults.   

 

The "Nourishing Our Children"  presentation will share timeless principles for supporting learning, behavior and physical health through optimum nutrition and will include the following:

  • Dietary principles to guide parents on how to nourish rather than merely feed your children.
  • The foundational nutritional principles Weston A. Price discovered during his extensive travels and research.
  • The dangers of modern processed foods.
  • Information about traditional fats and oils, milk, vital nutrients, and healthy meal preparation.

We held this same event last year and had an incredible turnout… and there are many folks who have since made very positive dietary changes to help themselves and their children.  This is THE event that got them inspired to make changes.  Given the great interest in this session, we wanted to host it again.  It is a super event and it is no charge, so please feel free to invite your friends, neighbors, and others who have an interest in Nourishing Their Children. 

As with last year, we have divided this into a Part 1 and Part 2.  Part 1 will be on March 14th and will cover all of the foundational information.   Part 2 will go into some more advanced and specific topics.  Part 2 will be on March 28th, for anyone that wants to pencil that on their calendar as well.
