The acids in lemon or lime juice aren't as strong as your stomach acids. I've
never noticed any health problems from eating ceviche, and I've eaten a lot of
it. I've never heard of anyone else mentioning health problems from ceviche.
Humans have eaten a lot of meat, fish, and fruit over the millenia, and that's
all you'll find in ceviche.
