What does the numbers mean?

Residual Ash PH measures the PH of eaten foods, not the food
itself. This Residual Ash PH scale differs from the PH scale used
to measure liquids like saliva, blood, urine, and water. That PH
scale goes from 0 to 14, with 7 being neutral. The Residual Ash
scale goes from 0 to 8, with 4 being neutral.
