Peachelysium
Nearly 30 years ago, I sat in a Linclon Center, New
York theatre and was fortunate to witness Beethoven's
Ninth Symphony as conducted by Herbert von Karajan,
played by the Berlin Philharmonic, and sung by the
Vienna Choir. So far as I am concerned, there is no
greater Ode to Joy than the final blending of
Beethoven's orchestration with Schuller's heavenly
human instruments.
Four operatic voices sang of Elysium, that section of
the "underworld" in Greek mythology which was reserved
for those who lived virtuous and heroic lives. The
music was perfection, and so too is today's Notmilk
recipe.
August is the time of year for fresh, sweet, tree-ripened,
nectar-dripping peaches. From Georgia to New Jersey,
consider yourself fortunate if you live near a peach
orchard producing nature's most succulent treasures.
I've found a wonderful source for Alabama peaches,
Durbin Farm. Their fruit is made expensive by the
overnight shipping cost (they do not ship to California),
but it's worth the $27 for a small box.

PEACH SOY ICE CREAM
Peel & slice enough peaches to make three cups.
Add one cup sugar (I use evaporated cane juice).
Add three cups thick freshly made soymilk according to this
recipe:
In your SoyToy, add 1/2 cup soybeans to the filter basket.
Fill the cooking pot with cold water to the 1300 cc level
(for thick milk). Cook and refrigerate soymilk.
Puree the three ingredients (peach, soymilk, sugar) in
blender and store in refrigerator.
This mixture can either become a delicious smoothie
(fill a glass with ice, add mixture to the top, add
to blender and puree) or add to your ice cream maker
to make the most incredible peach ice cream that you'll
ever taste. Pure Elysium!
