Call me a pistachio nut. Scientists may one day
discover the addicting factor, but once I start on
a bag of salted nuts, there is no stopping me.
When people ask me of proof of a supreme being
that created all of earth's wonders, I point to
the pistachio nut. No way in heaven that such a
gourmet package of incredible taste and rich
nutrients could have evolved on its own.

When I am asked for an example of how man has
risen above nature by improving upon God's
own creation, I point to pistachio ice cream.
I have yet to find a tastier manna from heaven
than freshly-made pistachio nut ice cream.

I love all things pistachio. As a child, I would
dare to make myself sick by devouring an entire
5 pound bag of Krum's nuts leaving indelible
red evidence upon my fingers, mouth, and clothing.

Last week, in the middle of one such compulsive
attack, a nut attacked back. I badly broke a tooth
and paid for that moment of pleasure with seven
subsequent days of excruciating discomfort. See:

While recovering, I treated myself to a remedy.

HOMEMADE SOY/PISTACHIO ICE CREAM

Ingredients:

Two cups thick freshly made soymilk according to this recipe:

In your SOYTOY add 1/2 cup soybeans to the filter basket.
Fill the cooking pot with cold water to the 1300 cc level
(for thick milk). Cook and refrigerate soymilk.

Puree 1-1/2 cup pistachio nutmeats (shelled nuts) in 1-1/2
cup soymilk. Add 1 cup sugar. I use organic sugar/evaporated
cane juice. See:

Place mixture in ice cream machine and freeze.
(You might want to add some chopped nuts to the mix.)

Heaven... I'm in heaven,
And my heart beats so that I can hardly speak.
And I seem to find the happiness I seek,
When pistachio ice cream melts 'neath tongue and cheek...
