My New book ("God's Nutritionist") is a tribute to
Ellen G. White, the most translated author in
the history of American literature. I've studied
her work and gleaned 500 of her most magnificent
quotations about nutrition and diet. Truly a woman
before her own time, no person in the history of the
human race promoted vegetarianism as strongly as
did Mrs. White. I've combined her own words with
references from peer-reviewed scientific journals,
and include in today's column the first two pages of
my new book (including 9 of her 500 pearls of wisdom
plus two journal citations).
I believe that there has never been a more powerful
statement on the virtues of a plant-based diet than
"God's Nutritionist," and urge you to buy one or more
copies for yourself, friends, and family. Enjoy pages
1-2 from my book. The following nine of Mrs. White's
quotations were written during a 50 year writing
period from 1856 through 1905.

I am so thankful to God that when Adam lost his Eden home,
the Lord did not cut off the supply of fruit. (1857 letter)

In order to know what are the best foods, we must study God's
original plan for man's diet. He who created man and who
understands his needs appointed Adam his food. "Behold," He
said, "I have given you every herb yielding seed,...and every
tree, in which is the fruit of a tree yielding seed; to you it
shall be for food." Upon leaving Eden to gain his livelihood
by tilling the earth under the curse of sin, man received
permission to eat also "the herb of the field."
(Ministry of Healing, 1905)

Grains, fruits, nuts, and vegetables constitute the diet chosen
for us by our Creator. These foods prepared in as simple and
natural a manner as possible, are the most healthful and
nourishing. They impart a strength, a power of endurance, and a
vigor of intellect, that are not afforded by a more complex and
stimulating diet. (Ministry of Healing, 1905)
4
Meat is not essential for health or strength, else the Lord
made a mistake when He provided food for Adam and Eve before
their fall. All the elements of nutrition are contained in the
fruits, vegetables, and grains. (Review and Herald, May 8, 1883)
5
God has, with a lavish hand, provided us with rich and varied
bounties for our sustenance and enjoyment. (Testimonies for the
Church, Volume 4, 1876)

Those who eat flesh are but eating grains and vegetables at second
hand; for the animal receives from these things the nutrition that
produces growth. The life that was in the grains and vegetables
passes into the eater. We receive it by eating the flesh of the
animal. How much better to get it direct, by eating the food that
God provided for our use! (Ministry of Healing, 1905)
7
Overeating has a worse effect upon the system than overworking;
the energies of the soul are more effectually prostrated by
intemperate eating than by intemperate working.
(Testimonies, Volume 2, 1870)
8
God gave our first parents the food He designed that the race
should eat. It was contrary to His plan to have the life of any
creature taken. There was to be no death in Eden. The fruit of
the trees in the garden, was the food man's wants required.
(Spiritual Gifts, Volume 4, 1856)
9
God provided fruit in its natural state for our first parents.
God is working in behalf of His people. He does not desire them
to be without resources. He is bringing them back to the diet
originally given to man. Their diet is to consist of the foods
made from the materials He has provided. The materials principally
used in these foods will be fruits and grains and nuts, but
various roots will also be used. (Testimonies, 1890)

"Western vegetarians have significantly lower average serum
total cholesterol concentrations, body mass index, and blood
pressure, all well-established diet-related risk factors for
coronary heart disease. Of particular interest is that the
lower average serum total cholesterol concentration would be
expected to result in an approximately 25% reduction in
mortality from coronary heart disease among vegetarians compared
with non-vegetarians."
