Jo,

I've made ice cream with stevia before. The problem I had is that I
couldn't get it sweet to my taste without getting too much stevia so that
it had a bitter after taste. I can't taste an aftertaste with stevia when
used in smaller amounts but like in a cup of tea but I could never get the
ice cream as sweet as I like it without an aftertaste. Next time I get some
good cream, I'm going to try it with stevia mixed with rapadura to get the
taste I want. If you don't like your ice cream as sweet as commercial
varieties, then I think stevia alone would work well. If you like it that
sweet like I do, you may run into the same problem I had when using stevia
alone. I think you would have some difficulty making vanilla with honey or
maple syrup (if you had some) because the flavor of either would overpower
the vanilla flavor.

... did the recipe turn out? ... Really well, except I used melon, not bananas! It needed using up. It's very tasty, but not creamy like ice cream should be....
