[The transcript is well done, although a few Australian English terms and
expresssions will be strange and difficult to understand even for other native
English speakers. --Paul]
[For example, the first one I came across is "by-stand", which Paul concluded
from the usage is a surrogate marker or what in North America is often referred
to as a "red herring".
What Paul thought was Australianese is actually a particular barbecue grill
brand named for (and promoted by) a former US boxer.
I did however need to do a Google search on barramundi since I'd never heard of

[The transcript is well worth reading particularly for people who want to learn
more about glycation but have a hard time understanding scientific articles.
