Here is a small note he sent me on Splenda.
Splenda [AKA sucralose] is an artificial sweetener in
which chlorine is combined with ordinary table sugar.
Pre-approval research showed sucralose shrink your
thymus gland (up to 40% shrinkage) and enlarges your
liver and kidneys.
Despite the manufacturer's comments, sucralose does
break down into small amounts of 1,6-dichlorofructose,
a chemical which has not been adequately tested in
humans.
It is clear from the hazards seen in pre-approval
research and from its chemical structure that years or
decades of use of splenda could contribute to serious
illnesses of your nervous or immune systems.
Similar to the aspartame situation 15 years ago:
[1] Pre-approval test indicated potential toxicity of
sucralose.
[2] There are no *independent* controlled human
studies on sucralose (similar to 15 years ago for
aspartame).
[3] There are no long-term (12-24 months) human
studies of sucralose's effects.
[4] There is no monitoring of health effects.
I would avoid/eliminate Aspartame, SPLENDA, and
ACESULFAME-K (Sunette, Sweet & Safe, Sweet One) from
your diet.

Tomato, Sausage and Eggplant Soup
Makes 3 quarts
1/3 cup plus 2 tablespoons olive oil
4 1/2 cup cubed eggplant (1/2 inch cubes)
1 1/2 tsp. salt
1 1/2 cup chopped onions
1/2 cup chopped fennel or celery
2 tablespoons minced garlic
2 tsp. ground or crushed fennel seed
1/2 tsp. pepper
4 bay leaves
1 tsp dried basil
1 1/4 tsp dried thyme
1 lb sweet Italian sausage with casing removed
1 1/2 cup chicken stock
1 29 oz. can heavy tomato puree
1 28 oz. can whole peeled tomatoes, chopped
1.) Heat the 1/3 cup of olive oil in a 4-5 qt. saucepan. Add the
eggplant and 1/2 tsp. of the salt, Sauté over medium high heat,
stirring frequently for 4 to 5 minutes, or until just tender.
2.) Transfer the eggplant to a bowl. In the same pan, heat the
remaining 2 tablespoons of olive oil. Add the onions, fennel or
celery, garlic, fennel seed, pepper, bay leaves, the remaining
teaspoon of salt, basil, and thyme. Cook over medium high heat,
stirring frequently for 5-6 minutes.
3.) Add the sausage and sauté 5-6 minutes, breaking up the meat into
small pieces with a spoon. Add the chicken stock, tomato puree,
chopped tomatoes with their juice and the eggplant.
4.) Cover and simmer 10-15 minutes. If the soup seems to thick, add
more chicken stock. Remove bay leaves before serving.
