Our son, Spencer, has been on the diet for nearly three years, beginning when he was 2 1/2 years old. We were concerned about implementing it because he loved milk and bread. In fact, because of constipation issues, we were giving him high fiber breads all the time. We didn't phase into the diet, but just "did it". Except for drinking soy milk, which he just started doing recently, he took to the diet very well. I think the key is finding good substitutes for the things he liked. I made him chicken nuggets with GL bread crumbs, etc. but mainly serve him meats, potatoes and vegetables and supplement with some health food store items. Both my husband and I say that it was not nearly the task we thought it would be. It just requires some education and then planning. In our area, we like Trader Joe's, Always Healthy in Lake Zurich, and even Meijer is carring some GFCF items. It may help for us to put together a
collaborative "good eats" list for each other to use. Just a few of mine...
Trader Joe's GFCF frozen waffles
Fleishmann's light margarine
Dinty Moore canned beef stew (or an off brand at Aldi)
GFCF fresh bread at Trader Joe's (don't remember the brand)
Bar-S hot dogs
Hope this helps. Spencer tends to be a good eater and I attribute that to my husband's approach to always making our children try everything once. They usually end up liking it.
