I use and sell the Tropical Traditions coconut oil as well. It can be used in smoothies (place the jar near the stove, NEVER heat it on the stove and NEVER microwave it, and it will become clear liquid). You can also cook breaded chicken cutlets in it (delicious!!!), and I also use it in salad dressing!!
I have also taken it just straight, 1 Tb/day.
There is a great book by Brian Shilhavy called VRIGIN COCONUT OIL (by Tropical Traditions) which is full of information about how coconut oil HEALS the thyroid, helps with weight loss, is extremely healing, etc. It is also full of recipes.
One is mayonnaise: (regular mayo, Hellman's, etc is FULL of soy!!!)
1 egg yolk
1/2 tsp salt (sea, Himalayan, fine)
2 pinches of sugar (I use organic sugar, regular! I also have "JUST LIKE SUGAR", which is all natural chickory)
2 tsps fresh lemon
1 Tb. white wine vinegar
1 Cup organic coconut oil (Virgin)
 
In glass bowl whisk egg yolk and dry ingredients. Combine lemon juice/vinegar in separate bowl. Then whisk 1/2 of lemon/vinegar into the yolk mixture.
 
Start whisking briskly. Add Coconut oil a few drops at a time until thickened
 
Then slow down a bit but continue to increase the coconut oil until it is a 'stream'. Once 1/2 of the coconut oil is in, add the rest of the lemon juice mixture.
 
Continue whisking until all the coconut oil is mixed. Leave at room temp for 1-2 hrs, then refrigerate.
