Oh my gosh, Sue! This looks wonderful! The cool thing is that I have all of the
ingredients except the heavy cream and berries. I think I'll go to the store
tomorrow! LOL!

It was SOOO easy to make too, which is always a plus, even though i am good
in the kitchen. Since it came out so good, i thought i'd share. :)

CRUST:
3/4 cup almond flour (i use Bob's Red Mill)
2 tbsp butter
3 drops liquid splenda
3 drops liquid Stevia extract
1/2 tsp cinnamon

FILLING:
1 box SF raspberry jello
1 cup boiling water
1 cup heavy cream
1 cup frozen, unsweetened mixed berries (mine is blueberries, raspberries,
blackberries and strawberries)


CRUST PREP:
In a small saucepan, melt 2 tbsp butter over low heat.
when melted, whisk in liquid sweeteners and cinnamon.
Add almond flour and mix until a crumbly mass forms
Lightly spray a pie plate with PAM and press almond flour mixture into pie
pan as evenly as possible
Bake in a 350 degree oven for 10-15 minutes.
Remove and let cool

FILLING PREP:
While crust is cooling, place 1 cup of frozen berries into a collander to
thaw partially.
Cut any large berries into smaller pieces when they are slightly thawed.
place Jello powder in a mixing bowl
Add 1 cup boiling hot water and stir to dissolve.
Add 1 cup heavy cream to hot jello and stir well to combine.
Add partially frozen berries to mixing bowl and stir to distribute berries
throughout
Pour mixture into cooled crust
Chill in refridgerator until well-set (at least 2 hours)
