Sorry about not listing the size of the jello. That's the small size
for the Choc. Raspberry Cheese pie. Following is the recipe for the
baked cheesecake:
Creamy Vanilla Cheesecake
5 (8 oz.) pkgs Philly Cream Cheese
2 1/2 Tablespoons A.S. (equiv. to same amt sugar)
3 eggs
2 1/2 tspns vanilla (the no carb kind)
Beat cream cheese at high speed on an electric mixer till light and
fluffy (approx. 5 min.) Gradually add sugar sub., beating well. Add
eggs, one at a time, beating well after each addition. Stir in vanilla.
Pour into a 10" spring form pan that has been sprayed with Pam.
Bake at 350 degrees for 40 minutes; turn oven off and partially open
oven door. Leave cheesecake in oven for 30 min. Remove from oven and
let cool on a wire rack in a draft free place. Cover cheesecake and
chill at least 8 hours. Slice into 12 pcs.
Total carbs: 41.8
Carbs per serving: 3.5

Here's an absolutely delicious recipe I got off another list
(lowcarb.com) that we had this evening. Outstanding!!!
Crab Stuffed Sole (I used Tilapia)
1 1/2 # sole (Can also use flounder)
1 can crab (6 oz.) (.8)
2 oz. cream cheese (2)
1 t. tabasco
1 T chives
1 egg (.6)
Mix all ingredients. Lay f ish flat and top with generous amt of
stuffing. Roll up and bake at 350 for 20-25 min. Serves 4
Carbs per serving: .9
There was a lot of stuffing that didn't fit in the fish so as was
suggested I just spooned it into the baking dish. You could even do the
stuffing all by itself as a main dish.
