Hi Tina,
havent been able to find time to get to my sister's house and borrow
her computer for about 6weeks, life's been pretty hectic. Im
obviously too late for icecream recipe, and I don't actually have
one to offer, but I found some great chocolate made by Sweet William
called Chocolate Dairy Free No Added Sugar. Has a good amount of fat
and the protein and carbs are really low. I think around 4 and 5.5g
per 100g, which is amazing, usually the carbs are around 50%, not 5!
I made Annan a meal of it melted with 60%fat double cream, which was
perfect for the diet, was a nice choc-yoghurt type texture melted
and when left an hour or so hardened into chocolate, but was a 4:1
ratio with the added fat from the double cream. Would depend on the
numbers you can use, but Annan's recipe was about 3.5parts chocolate
to:1part double cream(60%fat). Annan unfortunately wasn't able to
eat it, but I won't repeat myself and instead do a new entry to
everyone of an update and request for suggestions. I think it tastes
great! ToyNera
