Greetings to my far flung Zoners,

'Tis again I, your ever faithful, ever busy Karen, just dropping a
note to see how you are doing and tell you of updates in the Kitchen.

1.  I will be out of town until July 28.

2.  I have updated a number of pages in the site, particularly the
menu of the month with good summer food ideas. Always hit REFRESH
when you visit a page that you visited a long time ago in case the
old page is still in your cache.  Oh yes, for those of you who have
switched to vegetarianism, you will find links to a number of
nutrional descriptions from Worthington Foods in the SOURCES pages.

3.  I have been urging folks on the Discussion List to try to wean
themselves of caffeinated beverages and am offering "The Summer
Sampelr Pack" which has a number of yummy non-caffeinated teas and
Herbal Beverages, like the Fortune Delight.  It comes in cinnamon,
peach, raspberry and lemon, and you are actually drinking the entire

Dear Newsletter Subscriber,

It have been so long you may have FORGOTTEN that you had a subscription to
Karen's Kitchen Newsletter!  Well I haven't forgotten you OR a promise to
start the newsletter back up again, and here it is along with all the
terrific changes that I have been able to make to the Kitchen.  They are
98% all implemented.  The missing elements are little details like some
broken links I am still hunting down, and the Amazon Book Nook that I am
having to revamp.  Little time consuming things, but even THOSE are coming
along!

It has been challenging to say the least, to put everything back together
again.  What finally did it for me is a deep spiritual commitment to God
and then everything else started slowly falling into place as I prioritized
my life and my business with a different motivation than ever before.  One
of the goals was to NOT make myself CRAZY.  A good decision, but we are not
always good at following through on that...

The next thing I did was go back to school.  6 months later, I have learned
enough about my website and other aspects of my business that I am not left
hanging when someone stops working for me or when they decide to sabotague
something that I have done, maliciously or unwittingly (I've had BOTH
happen...).

So here are the new changes or old returning parts of Karen's Kitchen that
I hope will motivate you and help you in YOUR life.

I found out that if you don't have the newest version of NETSCAPE, you may
not be able to view the Kitchen.  I am looking for an older version of
Netscape 4 so I can try debugging, but until then, either upgrade or open
the Kitchen with Internet Explorer.  You can upgrade Netscape at

at: http://www.microsoft.com/ms.htm

IF YOU FIND BROKEN LINKS ON ANY PAGES, please send me the URL for the page
and describe the broken link or problem.  The Title of the page doesn't
help me because I don't always have the most CLEAR associations between
title and url.  But I am in a position to EASILY make changes now (all that
schooling REALLY paid off in streamlining my time!)

Saturdays (that is my Sabbath and I am GONE for a total rest!), and most

Hi everyone!

I'm trying to get back into the habit of writing a monthly newsletter with
some helps and ideas, and even recipes.  Good, healthy eating is a LIFETIME
commitment, so I have found that people who have Zoned for awhile are STILL
retaining many of the healthy habits that they picked up for the time that
they were Zoning.  Even if they don't PRACTICE them, they know them.  How
about YOU?

FEATURE OF THE MONTH--Drink more!!!==========

I'm writing this MID-AUGUST, and it STILL hasn't REALLY turned to summer
here in Spring Valley.  I've been able to wear long pants all summer long
without any adverse effects, but this morning, I suddenly realized that
jeans and a short sleeved blouse are just TOO WARM!!!  Maybe it will crank
up my metabolism??? I certainly have found that I am THIRSTIER than usual,
which reminded me that when you start to feel thirsty, you have ALREADY
BEGAN TO BE DEHYDRATED.  Are YOU drinking enough water during the day?

As most of you know, I am a distributor for Watkins Products because I LOVE
their products!  There are several new items that are out that I want to

RECIPES==============Summer Salads and Spices

I love to go to the refrigerator and have something READY TO EAT in the
middle of the day.  I will make up a salad that can last me several days,
just so that eating is a no brainer.  I tried this one last month and it is
YUMMY:

Black-eyed Peas and Oranges Salad
Recipe By : Karen of Karen's Kitchen
Serving Size : 6
Categories :
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup black-eyed peas
1 whole bay leaf
1/8 cup onion
1 medium orange -- juice and rind
3 tablespoons olive oil
6 small black olives -- chopped
4 whole green onions -- chopped
2 tablespoons fresh parsley -- chopped
4 medium oranges
1 bunch watercress -- washed

Place the beans, bay leaf and onion into a saucepan, add enough water to
cover by 1 inch, and bring to a boil. Boil rapidly for 10 minutes, reduce
the heat, and simmer gently for about 50 minutes to 1 hour, or until the
beans are tender.

Put the orange rind, juice, and oil in a large bowl and whisk together with
a fork. Stir in the olives, green onions, and herbs. Add the drained beans
to the dressing and season. mix thoroughly to coat the beans well. Peel and
segment the oranges; chop the fresh of 3 of the oranges and add to the beans.

Arrange the watercress on plates and pile equal amounts of the
bean-and-orange salad on top.

Arrange the remaining orange segments on the plate and serve immediately.

Thanks for all the responses!  I decided to send this out to the WHOLE
GROUP in one mass mailing, so you will find a WORD document attached at the
end of this called "11 block blank."

I hope you find this easy to use, and helpful as well.  Here is how it works:

Each column is a meal.  If you get 3 blocks for a meal, then you choose 3
CARB BLOCKS, one to go in each square in the Carbs section, then 3 PROTEIN
BLOCKS, one to go in each square in the protein section, and 3 FAT BLOCKS,
one to go in each square in the protein section.  (Just substitute the
number 4 on each group if you get 4 blocks a meal).  It could be the same
item for each block, but it is easier to see AND substitute if you do it by
blocks.

Do the same thing for each meal and snack column (if you only get a one
block snack, then it is one carb, one protein and one fat block per that
snack column).

When I do it, I put in reminders for short recipes in the NOTES section of
each column.  Longer recipes go on the top recipe section.  Save this as a
MASTER, for making more meal plans during the week.

PREPLANNING is your BEST way to Zone.  Sit down and decide what you are
going to eat this week, make up a shopping list, then stick to it.  That is
the LEAST EXPENSIVE WAY, both in terms of TIME and ENERGY and is going to
give you the BEST SUCCESS for meeting your nutritional goals.

Here is a little practice for a delicious breakfast:

CARBS:
3 Tbs. dry rolled oats
3 Tbs. dry rolled oats
1/2 cup canned peaches (sweetened with juice)

NOTES:  I use TWICE the amount of water as oats, and just nuke it 2 minutes
for oatmeal.  The peaches are WONDERFUL instead of sugar and you can have a
whole 114 gram fresh peach instead of the canned ones.

PROTEIN:
1/4 cup ricotta cheese
1/4 cup ricotta cheese
1/4 cup ricotta cheese

NOTES:  Make sure you get a GOOD, FRESH ricotta cheese that tastes very
fresh.  In San Diego I buy Polly Girl or Precious Brand.

FATS:
2 pecan halves
2 pecan halves
2 pecan halves

NOTES:  All put together, these food items make a WONDERFUL Breakfast
Pudding that sticks to your ribs for HOURS!

Menu planning is just that easy, ESPECIALLY if you have my poster to help
you transfer your food choices onto the planner without flipping pages or
carrying books.

Dear Members,

I don't want to loose contact with you, but due to a number of major
incidents in my life, I have not been able to get this newsletter
going.  This is another attempt to do such.

First, I hope that all of you are still doing well with this Zone
Lifestyle, even if you are not practicing it as "fervently" as you
were at the beginning.  It's funny how you can stop doing it
consciously only to find yourself going "Now have I REALLY had enough
protein with this meal???"  Maybe it is time to look at your life and
say "Time to REDO!"  I have had to do it myself more than once.

Restarting is not easy, but the EASIEST way is to simply haul out
that Karen's Kitchen Poster and start making your meal plans.  I have
a FREE MEAL PLANNER which I'd be happy to send you if you just drop
me a note.  It is in MSWord, so most everyone can open it in their
computer, make a few extra copies, and start their planning.

If you have lost your poster or simply want to order a new one, give

As far as stuff going on around Karen's Kitchen, I am perservering in
spite of another acute back injury.  What caused it?  Hmmm, a day at
the Fair?  Carrying a Canoe?  Doing the laundry?  LIFE???  All of the
above PLUS some.  I actually had started working out back at the gym,
swimming 3 times a week, and because I was SWIMMING and not water
jogging, that may have exacerbated the condition as well.  But I have
my water jogging belt on again and am spending EVERY DAY at the gym
trying to build up the muscles around the disk area, hopefully to
recouperate faster than last time.  I also invested in some of those
WEBBED GLOVES to build up my upper body strength, and really fell a
big difference in that as well.  The caution is, if you haven't been
exercising much in the last year, it is time to START AGAIN, but take
it EASY for the first couple of weeks.  We just don't recouperate as
readily at 48 as we did at 28...

Eat well, eat real food, and eat for your health!

Dear Former Subscriber--

Just a quick note--I have not been publishing this newsletter for the last
year due to a ruptured disk in my lower back last January.  The pain was
tremendous, and I had to let several endeavors go.  I don't know if you are
still Zoning or if you have tried to visit my Kitchen lately, but things
are still up in the air for a few more weeks, so I thought I would take the
time to touch base with all of you and see how you are and if you want to
continue to be on this newsletter when it starts up again.

As it used to be, the Newsletter will give you the latest information on
what is going on in Karen's Kitchen.  I will also share top recipes that
have come up though my regular discussion group, and inform you of the
latest products that help make Zoning easier for you.

Of course there will ENCOURAGMENT.  One year on the massive and powerful
drugs I have been on, and I am NOT the sleek thing that fell down screaming
in pain one year ago.  Time, weight, drugs, depression and a loss of a will
to live healthfully all conspired to put weight on me again.  My back feels
GREAT most of the time, but coming off the drug induced stupor, I looked in
the mirror and thougth WHAT HAPPENED???  For the sake of any of you this
has ever happened to, this next year is for YOU!

For all the years Karen's Kitchen has been up, folks have always had to
listen to me give glowing reports about the weather here.  Well, just to
cheer some of you up, it is predicted that it will SNOW here tonight in our
local 6,000 ft. moutain range!  Thought you would enjoy the irony of this...

As I am sitting here in my sweater and boots on June 3, I shake my head a
bit.  The end of this month marks 3 years that Karen's Kitchen has been
online.  I know how much it means to many of you, and I just want to state
my commitment to providing you recipes, news, information, products and
ENCOURAGEMENT to continue with these healthy lifestyle changes that you
have made.

My sister Janet, an "aware" but non-Zoning employee of mine, was surprised
the other day when she went to lunch with 3 of our "skinny" friends.  "They
just did not eat that much food..." she rather marveled at.  When we see
giant burgers, giant salads, giant muffins, giant servings wherever we go,
it is hard to think in terms of reasonable amounts of food.  Issues of
deprivation will pop up often simply because of the way food is presented
to us by current advertising and food companies.  How are YOU dealing with
it?

I have been looking at my food with a more critical eye.  Do you ever think
to just cut whatever portions you are served right in HALF???  I keep
telling myself before walking into a restaurant "TWO MEALS--I'm buying TWO
MEALS!" just to remind myself that I don't really even need HALF of the
portions are that they are giving to me.

Whatever works for you, I hope you take the time to join up with our
Discussion List and tell us what works for YOU!  And if it ISN'T working,
tell us about it, and let us help you figure out WHY.

Greetings!  I've talked about doing this for over a year, so now I am going
to make the BIG PLUNGE and invite all of you to....

Karen's Kitchen Convention!!!!

Scheduled for April 22-25, here is our tentative schedule:



Thursday night ., April 22 - 6 p.m. appetizer dinner and get acquainted

FRIDAY
7:30 a.m. - meet at Jimmy's for breakfast of feta cheese omelets
8:30 walk to Karen's house (1.3 mile hike!)
9:30 food demonstrations--Phyllo dough fillings and other make ahead meals
12:30 Eat food demonstrations!
1:30 Tour of San Diego, Seaport Village or Horton Plaza
3:30 Cheese and fruit snack
Trip to Farmer's Market
5:30 Prepare for Zone BBQ with Farmer's Market produce--grilled veggies and
Deep Fried Turkey
8:30 Homemade Zone ice cream snack

SATURDAY
7:30 a meet at Jimmy's for breakfast of oatmeal, breakfast meats and fresh
fruits
8:30 walk to Karen's house for Tai Chi demonstration, exercise ball
demonstration, Maximum Walking Tape viewing and practice, free weights
demonstration.
Exercise Discussion Group(s)
11:30 - Lunch in La Jolla, tide pools, cave visits
5:30 - Leave for IN CAHOOTS!!!  Dinner there (this is not paid for, it is
your choice for meals)
6:30 - Country Line Dancing Lessons at same
9:00ish - return home

SUNDAY
7:30 - Breakfast at Jimmy's
8:30 - Walk to Karen's
9:30 - Review of Highlights of trip, final discussion
11:00 - Optional trip to Winery in San Pasqual Valley, wine and cheese
tasting for late leaving (Cost not included).

This is tentative, but generally what I would like to do.  It is exactly
one month from now, so you need to make up your mind quickly (it sorta
snuck up on us!) and make those plane reservations to fly into San Diego
Airport right away!

There is a motel that is just down the street from Jimmy's restaurant,
which is just down the hill from my house, so we will get in our exercise
each morning just from transportation!  Jimmy's is owned by a family friend
and he is REALLY NICE about putting together group events, with an entire
room for our use.

I would LIKE to fit a bike ride in there, but I am waffling on taking you
to Mission Beach where we can ride around San Diego Bay, or going into La
Jolla and walking around the cliffs and sea cave after a morning of
exercise demonstrations of, as Gail puts it, "Start from Where YOU ARE!"
demos.  Followed by an evening of Country Line Dancing, I don't want to
wear you out!

The cost of the Convention and all meals (except dinner Saturday night and
Sunday  Wineries/night if you extend your stay) is $150 per person.  Cost
of lodging and transportation is up to you.

For local lodging, you may contact Crown Inn Suites.  The most expensive
room there is $59.90 per night, and it has two queen beds, a sitting room
with fold down couch and a kitchenette.  They have other rooms with one
queen and sitting room ($49.90/night) and a small room for only $39 per
night.  Their number is 619-589-1111.  There is no increase on the price
for additional people in the room.  If you have a family and only one wants
to attend the Convention and the other wants to take the kids to Sea World,
The Zoo, Wild Animal Park or Lego Land, this motel is on the bus line only
2 miles from the Trolley that can take you ANYWHERE in San Diego, even to
the train station if you want to send them to Disneyland!

If you want to stay in fancier digs (like the Marriot or Hyatt Downtown San
Diego), I am 10 miles east of San Diego on Highway 94, and with a rental
car, it is a straight shot from there to here.  Lodging at the Crown Inn
Suites is not luxerious, but it is nicely located and moderately priced and
fairly spacious.  No views, but I promise to wear you out so you won't care
what view you have at night, you will be FAST ASLEEP!

Deadline for Reservations will be April 7, although if someone wants to
come at the last minute, I can probably SQUEEZE you in...!  I think this is
going to be a BLAST, and if you want to bring your own RV, I can figure out
some type of parking in the driveway for a few of them, and a small fee if
you want hookups (I live in the country on a 1/2 acre lot).  The view is
GORGEOUS here and the weather is phenomenal.

I hope we get a tidy little crowd of about 12 (otherwise I will have to
locate it a bit differently), and that this can be a great kickoff to a
larger one either this fall or next year.  I want you to feel you have had
FUN, that you have been EDUCATED and MOTIVATED and seen lots of San Diego
as well!

Just a note to let you know we still have a few spaces left in the
Teleclass tonight at 9:00 p.m. EST called "Diet not working?  Time to
switch to PLAN B!"  all about using the Zone Eating Plan for YOUR health.

This is a great class to bring your non-Zoning friends to.  I will be going
over Zoning basics, answering questions and really helping to un-muddle all
the hard stuff about Zoning.  It IS easy, if you have the right tools and a
little explanation.

MasterCook, Lesson 1 is coming up this Thursday night at 9:00 p.m. EST
(6:00 p.m. California time).  I just got off the phone from teaching it and
we DID record it live.  The second class will be recorded live as well, and
a copy of the tape will then be available for any of you who want to take
the class but can't make it for those times.

But for those who CAN, drop me a line and I will send you the information
on signing up for participating in the class.  Cost of the class will be
$15--and no, I am not going to sell the tape for less!  This is high
quality instruction, and FUN TOO!  Be there "in person," to get the most
out of it.

Teleclasses are simple.  You simply sign up for one via e-mail, and you are
given a phone number to call at the designated time.  When you call that
number, I am on the other end of the line, and we are then joined on the
telephone by everyone else who has signed up for the class.  One hour
later, we are all smarter and all amazed that an hour has gone by so quickly!

Just keeps kids and critters out of the room, tell all adults to stay away
as well, and without snacking or sipping, join into the conversation.  No
computer is required, just you and the telephone!

Teleclasses are a new way of learning  here in Karen's Kitchen.  Karen
announces the class, you register for it via e-mail, and she e-mails you a
phone number and the confirmation of the time and your registration in the
class and a reminder just before the class.  You call in to that number at
the designated time, along with all the other class members, and Karen
leads you in the discussion or learning topic of the class.  It is THAT

5.  Plateau Breakers

You started Zoning and slowly but surely the weight came off.  Then one
week, two weeks, maybe three weeks went by with no loss of weight.  WHAT IS
HAPPENING???  You still have MORE weight to lose!!!

A couple of things could be happening.  If you are exercising, you might be
putting on MUSCLE WEIGHT.  Muscle weighs more by volume than fat, so you
could still be losing FAT while you are gaining MUSCLE.  This is a good
thing, because resting muscle burns calories!  Measure inches, not pounds!

If you are really in a weight loss slump or at a plateau, try this:
eliminate ONE CARB BLOCK A DAY and ADD three fat blocks (1.5 grams per fat
block in this instance).  Continue that each meal until the weight loss
resumes, then go back to your regular blocks.  BE SURE that the extra fat
you are adding is monounsaturated, however!

Blessed is the person who can laugh at themself, for they will never cease
to be amused!
