You should get in touch with the Ayurvedic Practitioners Association
(www.apa.uk.com). They are based in the UK, but have contacts with places in
Germany (I don't know about France). They should be able to tell you about
existing Ayurveda places, to provide you with contact details and generally to
advise you.
