Hypnosis is valid: there are thousands of academic papers in the Psychology
literature to attest to that. Just do a search of PubMed and you will get
overwhelmed with proof. It is beyond dispute.
As to how hypnosis helps with weight loss - it doesn't.
Hypnotherapy is used to address issues of over eating.
The hypnotic induction allows the client to access feelings and representations
not otherwise available.
Then the hypnotherapy process has the opportunity to change the person's inner
beliefs.
Once those beliefs are changed the behaviour changes.
The subject is far too big to be able to be addressed in an email.
Your reading list should include books on Metaphor Modelling, Core
Transformation, Gestalt, Cognitive Modelling, Visualisation and scores of other
tried and proven techniques.
