Hi,

Welcome to the group!   I can understand you being overwhelmed.  My husband has Celiac disease and when the doctor diagnosed him 3 years ago, we never heard of it before.    My husband is a very picky eater and it took a lot of trying this and that to come up with the things he likes.  If it not for this group, I do not know what I would of done.  This is where I learned.  

I use the Bette Hagman's baking book, like Tetan.   There is a french bread recipe in there that I use majority of the time.  Actually all the time for my husbands breads.  It is very simple and you use a regular oven.  You do not need a bread machine.  I do have a bread machine with a gluten free setting too.   I use the french bread recipe to make his hamburger rolls, hot dog rolls and sandwich rolls too.  I prepare them, shape them and then freeze them so that he has it when needed.   

As for flour, he likes Tom Sawyer flour.  It is a blend of rice and tapioca flour.  I purchase it directly from Tom Sawyer, online at http://www.glutenfreeflour.com   There are many flour's out there to try, you just have to find one that works for you.  What I like about T.Sawyer flour is he tells you to substitute cup of his flour to a cup of regular  flour, so you can use your old recipes.  I make his pizza recipe also, except I use buttermilk (saco) dry instead of lowfat powder milk.   I do not know much about any flour brands, but have used bobs red mill tapioca flour, potato starch flour for some things.  

As for help, on the internet, you can get some good information from Columbia Presbyterian  Hospital Celiac Center, NYC.  
Also, if you want to know if a certain product is gluten free, you can search on line for the companies web site, for nutrition, and a lot of times someone will ask the question in FAQ section.  If not you could always contact them and ask if the product is gluten free.  You will find some of those listing of gluten free products from postings on this list too.
