My daughter has Celiac, and when we first found out my Mother was doing research for us in Syracuse.  She contacted the following people and found them to be truly wonderful and full of good information and advice.

They also have a registered dietician as part of the group who does free consultations and can answer a lot of your food questions.

I have celiacs disease and Crohns disease. I was diagnosed with
Celiacs disease 2 moths ago. I have been doing the atkins diet for
about 6 months now because I read it helps crohns. I feel alot better
on it. Now that I know alot of my symptoms are from celiacs disease I
have been to wegmans about 5 times trying to figure out stuff to buy. I
have bought some mixes and some already made cookies and pretzels. I
cant afford to buy alot of the stuff. It is so expensive. I want to buy
some of the flours and make things from scratch but I am overwhelmed. I
am not sure if there is a flour that I can just use like regular flour.
I have a Bobs red mill gluten free flour. I have to buy Xantham gum to
use it and it is $9 a bag. I am a baker and am overwhealmed with all
the diffrent types of flours. Can any one suggest someplace where I can
get info to help my confusion. I am in Syracuse. I am going in for an
endoscopy with biopsys tommorow so I am hoping we have a support group
or something here.
