RE: [glutenfreeinwny] Newly diagnosed and have no idea on how to start.

I can give you a recommendation on some cookbooks, which will help you out a lot in the beginning, until you get the hang of gluten-free cooking and baking. I like to use the Bette Hagman Gluten Free Flour Mix. It is a combination of Rice Flour, Potato Starch Flour and Tapioca Flour. Her cookbooks are pretty good. I get a lot of use out of her "Gluten Free Gourmet" book-- and that has the flour recipe in it. I also make her pancake recipe, but get better results using fresh buttermilk(1 cup) in substitution for the buttermilk powder and water. I serve these to my family and guests.
I also especially like "The Gluten Free Kitchen" by Robyn Ryberg. She uses a combination of Corn Starch and Potato Starch for all of her recipes. I love her piecrust and sugar cookies.
For regular cooking (not baking) I use plain rice flour in direct substitution in recipies. For baking, I find that substituting cup for cup the Bette Hagman flour mix, and then adding 1 tsp. Xanthan gum per cup of flour and doubling the levening agents (eggs, baking powder, baking soda) will produce great results about 7 out of 10 times for regular wheat-flour recipes.
You'll have a lot of experimenting to do, until you find recipes and products that you like, and then once you do that, you'll probably be baking and freezing stuff so you aren't constantly baking. It can be very expensive, but making your own things makes a big difference.
The first year on a gluten-free diet is the most difficult and can be very depressing at first. It is important that you find a good support network and do some reading to make sure you have CURRENT information-- there are still some dated ideas floating around out there about what is and isn't safe. Just keep in mind that all of your effort is making you healthier and that it will get better soon.
I'm a big baker, so if you have any questions, I'm happy to help out!

Good luck!

I have celiacs disease and Crohns disease. I was diagnosed with
Celiacs disease 2 moths ago. I have been doing the atkins diet for
about 6 months now because I read it helps crohns. I feel alot better
on it. Now that I know alot of my symptoms are from celiacs disease I
have been to wegmans about 5 times trying to figure out stuff to buy. I
have bought some mixes and some already made cookies and pretzels. I
cant afford to buy alot of the stuff. It is so expensive. I want to buy
some of the flours and make things from scratch but I am overwhelmed. I
am not sure if there is a flour that I can just use like regular flour.
I have a Bobs red mill gluten free flour. I have to buy Xantham gum to
use it and it is $9 a bag. I am a baker and am overwhealmed with all
the diffrent types of flours. Can any one suggest someplace where I can
get info to help my confusion. I am in Syracuse. I am going in for an
endoscopy with biopsys tommorow so I am hoping we have a support group
or something here.
