I had hives everyday for eight months. No medicines, shots, etc worked. I felt it was an allergy to medication and
stopped taking what I thought was the offending medicine and the hives slowly went away. Tammie

I had red that allergic hives could happen as reaction not only to
food but to infection like H Pylori or Candida. I would like to know
if somebody had hives here and what did you do for that.

Which starchy foods?  Obviously you have to eat more protein and fruits and veggies, but everyone needs SOME carbs.  Check out the specific carbohydrate diet (just do a search).  See if that works for you.  I can currently eat potatoes, corn, buckwheat, quinoa.

Headaches, fatigue can be a (food) sensitive issue
Food sensitivities can be just as damaging as allergies, but they're
harder to decipher.

BY TRISHA POSNER
Special to the Miami Herald

''No, sorry, I'm sensitive to chicken,'' the woman said as she passed
by some samples at the Aventura Whole Foods.

''Sensitive?'' I asked. ``You mean you're allergic to chicken?''

''Not allergic,'' she said. ``Just sensitive.''

I then received a 10-minute introduction into the world of food
sensitivities and intolerances. We've all heard about food allergies,
when nuts, dairy, gluten or something causes hives or itching, and in
the worst cases, is life-threatening. You eat the bad stuff and your
body instantly tells you.

Food sensitivities can be just as damaging, but are more complex to
decipher. Researchers believe they contribute to everything from
migraines to chronic fatigue to irritable bowel syndrome to acid
reflux. For people trying to shed unwanted pounds, intolerant foods
are harder to digest, don't metabolize well, and have a nasty
tendency to stick around as fat.

But it's not easy to recognize your intolerant foods. Only your body
knows, as white blood cells react to the foods and wreck havoc over
time with your health. My Whole Foods friend told me about ALCAT, a
Deerfield Beach-based company that for for more than 20 years has
perfected a system for testing up to 200 foods, additives, colorings,
molds and even environmental chemicals from a blood test.

I'm 57, five-seven, weigh 112, work out regularly and eat healthy
foods. However, I am a migraine sufferer, usually once or twice
weekly. Although I knew migraines could be exacerbated by certain
foods like red wine, aged cheese, and even chocolate, I had
eliminated them at different times, and never discovered my headache
trigger.

In mid-June I went to ALCAT (your own doctor can draw the blood and
send them the sample). The tests costs between $199 to $949,
depending on how many foods, additives, and chemicals are tested.
Insurance may cover part of it, but you need to check your policy.

I was surprised by the results. ALCAT classifies the intolerances as
severe, moderate and mild. It then provides a long list of acceptable
foods. Red-lined ''severe'' food should be avoided for at least six
months. For me, that meant feta cheese, oats (no oatmeal!), and
halibut. Turns out that your body reacts negatively to certain foods
either from your genetic makeup, or over-exposure, especially if
there isn't enough variety in what you eat.

On my yellow list, moderate, I should avoid for three to six months
some things I really love, like ALL wheat and gluten products, which
I learned can contribute to bloating.

Finally, on my mild intolerance list, which means I should have them
no more than once every four days, there is my daily cup of java,
lamb, pork, tuna, strawberries, crab, coconut and too many others to
list.

The good news is that you don't have to give up these foods forever.
Once your body is detoxed for half a year, you slowly reintroduce the
foods one by one, and see how you feel.

Six weeks into the program, I can see the changes. I've had 45 days
of no migraines. Also, the swelling on two knuckles has gone down
about 50 percent. And my post nasal drip has stopped completely. My
energy, even without my morning coffee, is as good or better than
ever.

''I'm not surprised,'' says Dr. Judy Woolger, co-director of the
University of Miami's Executive Medicine Program and who utilizes
traditional and complementary wellness techniques in her practice.
``Patients come in not feeling well, and they have had all the
traditional tests, but sometimes it takes something like ALCAT to get
a better diagnosis and make them healthier.''

So, now I have a scientific snapshot of those foods to which my body
is intolerant. By New Year's, I hope I'll still be headache free,
even though my frequent visits to Starbucks may be a treat of the
past.

Hi Cara,
You asked if I am cancer free. The short answer is always an upbeat
peppy, YES. My lab results and self-checks of my chest wall would
indicate there is nothing major going on.
The long answer is all people have "abnormal" cells in their body
every day. It is the job of our immune system to detect what is
"self" and what is "unself". My goal is to do all I can to help my
body do a better job of that than it has done in the past.
Unfortunately, the chemo I participated in has quite likely made me
susceptible to leukemia in the years to come.
I am motivated to follow my ALCAT food list to the best of my ability,
but there is a learning curve and I don't have local support regarding
the ALCAT list from a health professional nor my family. Last year we
spent so much $$ on my medical stuff it is hard for me to feel OK
about spending more for professional input.
Currently, I am having a hard time coordinating my family's meals and
my ALCAT meals. I also realized that though I have been good about
eating my "green list" foods, I have totally abandoned the idea of the
rotation diet. I now want to work to incorporate the rotation diet
into my eating plan.

Here are the areas that seem to be my biggest challenges;

SHOPPING (I want to eat as much fresh and organic as possible. It
seems I would need to be at the market each day or at least every
other day. Is that true for you all?)

ORGANIZATION OF THE KITCHEN (My refrigerator, freezer, shelves, and
counters don't seem to have enough space to have my family's food and
my 4 day rotation foods easily accessible. What is working for you all?)

CRAVINGS (Even when I am highly motivated to be consistent...I am
still preparing foods 3 times a day for my family that are NOT on my
ALCAT list. I find it difficult not to taste in order to correct the
seasonings, let alone devour the "unhealthy for me" food. What are
some suggestions that are helping you all?)

Sorry for the long post.
I had some uninterrupted time at the computer.

Thanks for any input.

Hugs,
Teresa M.

Hi Cara,
I can totally relate.
I would encourage you to follow your instincts.
I had IBS symptoms for years and was never taken seriously by doctors
nor nutritionists. The symptoms can be either stools that are way too
loose, or stools that are way too dry. I do believe that some good
doctors are out there, but I didn't bump into them.
Then, in 8/07, I was diagnosed with breast cancer. I think my body
was too busy fighting my sensitivity foods to get around to fighting
the cancer cells.
Also, I would encourage you to go gluten free and casein free.
http://www.youtube.com/watch?v=_Kb9GWOigOM
I am using the book, Eat to Live, by Dr. Joel Fuhrman. It's filling
meals and easy to prepare and follow.
Also, probiotics are helping to build back up all the "good" yeasts.
They take care of bringing the "bad" yeasts back into balance.
It is worth investigating.
Be in touch.
Hugs,

Hi Scott,
As I understand it, you would need to do an additional 6 months
abstaining. I would double check with ALCAT.
They have an 800 number.

Thanks – in the intervening time, I’ve developed plenty of good meals which my family and I can eat.  I’ve also had my middle child tested, and we were working on his issues too.  However, both of us continue to be ill.  I believe I have a major yeast issue which needs to be addressed, because every time I make a yeast bread for my son, I get sick for a day or two.  I don’t know whats wrong w my son tho – now that school is back in session, he’s having the runs every morning again.  Digestive enzymes helped me a lot, and him a bit . . .but I’m almost ready to feed him gluten again, I cant imagine him being any more sick than he already is.  I keep wondering if one of my flours was contaminated, or what, but I cant figure it out.  I need to somehow find a doctor who can help us, but I just don’t trust any I’ve found.  You know, the way they just smile that condescending smile that lets you know they think you’re a hypochondriac?  They give you one or two cheap tests and tell you your fine . . .

Hi Cara,
I know you haven't posted since June, but maybe you'll check in soon.
I have a reluctant family too.
I finally found that by combining the ALCAT lists with the food
suggestions from Dr. Joel Fuhrman, Eat to Live, I can eat HUGE meals
while regaining my health AND dropping the extra weight.
I began in earnest June 23,2008 and have comfortably dropped from
175lbs down to 155, while staying strong and feeling great.
I highly recommend it.
I learned from a library book, but there is a website and plenty of
YouTube interviews with Dr. Fuhrman.
My family is now willing to start lunch and dinner with a big green salad.
Enjoy,
Teresa M.

Right after I was diagnosed with breast cancer,I contacted ALCAT for
the $500 set. I paid cash, but the information has been well worth the
money.
Since then, I have combined the information from ALCAT with an eating
plan I learned from a book, Eat to Live, by Dr. Joel Fuhrman.
My skin issues cleared up. My nose doesn't drip like the faucet it
used to. A 50 year battle with constipation is cleared. AND I have
plenty of energy, though 9/20/07 I had bilateral mastectomies followed
by HARSH 5 months of chemo.
I credit ALCAT and Fuhrman with a lot of my successful healing.
I just wish I had found the information sooner...
Hugs to you all,
Teresa M.
