Jerk Corn Fritters
by Niki Lasher
You will need:
For the fritters:
Deep fryer with hot oil
1 cup white flour or whole wheat flour with gluten added
1 cup cornmeal
1 teaspoon baking soda
1 cup tofu
1 cup leftover cooked fresh corn, drained
1 tablespoon soy sauce or 1/2 teaspoon evaporation made sea salt
water to moisten (usually 1/2 cup)
For the jerk dipping sauce:
1 large onion
1 fresh green bell pepper or 2 chiles or other hot peppers
1 teaspoon ground nutmeg
2 teaspoons fresh parsley
1 tablespoon cold press olive oil
Coarsely chop all of the jerk sauce ingredients, and either using a
mortar and pestle, or a heavy mug and a cutting board, crush and grind
them together until they form a paste.
Set aside a full tablespoon of the paste to use in the fritters.
Combine the dry ingredients, and aerate (fluff) them with a fork or an
elextric mixer.
In a separate bowl, mix the wet ingredients well, including the
tablespoon of the jerk sauce.
Mix the wet and dry ingredients, and then add the corn, and enough
water, if any is needed, to make a heavy, but spoonable batter.
Drop the batter into the hot oil a tablespoon at a time. When they are
golden brown and firm, fish them out, and drain on a stack of paper towels.
Serve with the sauce on the side for people to dip the fritters in.

An Ital way of eating is not just good for you nutritionally. It means
you will have less pollution floating in your bloodstream from mass
farming and hormones given to animals. Even if you're fully comfortable
with yourself as a predator in the animal kingdom, it's a good idea to
at least limit the consumption of meats and over-proccessed foods.

Student Suspended for Dreadlocks Because She's White
September 29, 2003
Summary and Comments: A Montana student has been suspended for wearing
dreadlocks, not because of the hairstyle itself, but because she's White
and has
this hairdo. The ironic part is that the school superintendant, doesn't
realize how racist this is.
To quote the article:
While House defends his decision to suspend Lanegan, he says the
situation would have been different if she had been black. “That’s
natural, that’s expected, that’s cultural,” he says of the dreadlocks.
House insists the policy doesn’t create a double standard: “Is it
natural for this white student to have this kind of hair? It is natural
for other students to ask to be moved because they say the hair smells?
Yeah, we see a difference.” [ --- Whitefish High School Superintendent
Jerry House]
I hope he doesn't expect Black people to feel as if he's doing us any
favors. By the same logic, a Black student would be suspended for
having relaxed hair. People like that shouldn't be allowed around kids.
Good thing it's a high school and not an elementary school where some
defenseless child might believe what he says.

Dreadlocks Inspirations and Affirmations - _dread_, a poem about how
dreads tend to pick up everything by Kthulah
n the matted mass atop my head
coils of lint collectors
waving in the winds of time and change
like branches of trees
when incongruent with well sewn clothes
said to be mere fashion
or a reclamation of the roots
or just plain laziness
but some of us know the truth in it
the word and the style dread
in my own there are fragments of pain
leftover relaxer
used to make it more manageable
ignorant times searching
for a decent oil to soothe my scalp
strands of a wool sweater
the brushings of my family's hair
sheddings of violence
starving days to save to feed others
then a bizarre weight loss
when the poverty ended
flesh of curious hands
dead flakes from those who did not bother
to ask before touching
like tentacled receivers of filth
paralyzed to resist
they take whatever is offered them
with dignified silence

Reggae/Soca Song of the Week: Lady Saw - Baddest Girl
Definitely a power song that many women can identify with or at least
take as motivation to stand their ground.
Remember, if it's good enough to download, it's good enough to support.
Buy the CD for consistent sound quality and to show respect to the artist.

Dreadlocks Site of the Week
Russian Dreadlocks Forum
http://www.dreadlocks.ru/
Most of the visible sites about dreadlocks are in English, but since
people need information and discussion in their own languages, it's nice
to see a Russian site about dreadlocks. It has discussion on many
aspects of dreadlocks, what it's like to be dreaded in Russia, and vital
info on the hair textures and how dreads do in thr weather of the region.
