Go to Amazon.com and look up Dr. Richard K. Bernstein. He is a doctor who is himself diabetic, and he teaches that the best way to control diabetes is by low-carb eating. He has written several books on the subject, including a cookbook. He especially recommends the low-carb diet for prediabetics and 'borderlines' (although many doctors don't use that term any more) to keep them from developing full-blown diabetes.
If your husband is overweight at all, he should start exercising and get the extra adipose tissue down.
