with Splenda. My husbands birthday is coming up and I would like to
make him a cake. This is his first birthday since being diagnosed.
He's done so well with the new lifestyle that I really want to
reward him with a real birthday cake. I can't seem to find one
though.

A friend made this one for my birthday. I love it and make it for myself now.
Happy Birthday to hubby.


APPLESAUCE SPICE CAKE
3 cups water
1 1/4 cups raisins
2 1/2 cups unsweetened applesauce
3 beaten eggs
2 tablespoons sugar sub (I use Splenda)
1 cup vegetable oil
3 cups self-rising flour
3 tablespoons cinnamon
1/4 teaspoon baking soda
2 teaspoons vanilla
Cooking spray oil

Mix 2 1/2 cups water and the raisins in saucepan. Bring to a boil. Simmer
until liquid absorbed - watch carefully so
it doesn't burn. Remove from heat.
Add applesauce, eggs, sugar, oil and remaining water. Stir well.
Mix dry ingredients. Gradually add to applesauce mix. Mix well. Add
vanilla. Stir well.
Pour into 10" bundt pan that is sprayed with oil.
Bake at 350' for 40-45 minutes. Cool 10 minutes before removing from pan.

NOTES - Self-rising flour may be replaced with: 3 cups all-purpose flour
minus 6 tablespoons.
Add to this flour 4 1/2 teaspoons baking powder and 3/8
teaspoon salt.
- Use pan to suit your occasion.
- Cake is moist and delicious.
- Top with Cool Whip or diabetic ice cream.
- Sprinkle with cocoa or icing sugar on top only. Just to
decorate.
If using flat cake try placing paper doily over top and
sprinkle icing sugar over it.
Remove doily for fancy outlines.
- Mix plain sugar-free yogurt with small amount of crushed fresh
or frozen fruit (blueberries,
strawberries, etc.) and add to each serving.

Try:
GLAZE
1 tablespoon cocoa
1/2 cup icing sugar
1 tablespoon hot water
Mix all until smooth. Drizzle over warm cake. Cool to set.
(low sugar count per serving)

Sorry - should have added it the first time. This is for just the cake. Makes 28 slices. Each serving: 29 mg Cholesterol 165 Calories 20 mg Carbohydrates 2 gm...
