HI, Thanks for the question! Dr. Wallach talks about oil in regards
to it being heated up and turning rancid. The heating process makes
it very bad for you ie: fried foods and that cold pressed oils are
good for you as long as they are almost impossibly fresh. For
instance made daily or kept cold at all times. So my understanding
is olive oil just like other oils would only be ok in Dr. Wallach's
opinion if fresh and refridgerated and never heated up as in frying.
Dr. Wallach is actually a HUGE proponent that I can tell of consuming
oils that are not heated and are fresh as in the American Longevity
EFA capsules. We poke holes in the gelatin outer and squeezze this
oil into our babies food. Almost a miracle nutrient!

I was wondering if anyone knew what Dr Wallach though about Olive Oil. I have heard him say several times to stay away from fried foods but I neaver heard if...
