Took me about 4 days to notice that my food seemed to not "hang" in my
stomach anymore. About 4 weeks though to start feeling better physically
and realizing that I was on the right track. From that point took about a
year before I was back to what I would consider "normal" in energy,
digestion, etc. Definitely takes the body time to heal. ALso made the
mistake of eating some gluten off and on before I realized all the forms it
comes in. Hydrolized protein, vegetable btoth, food starch, list is almost
endless on processed foods. So many sources of hidden gluten in foods that
many people who try the diet give up thinking that it is not what is wrong
with them when the real problem is that they are continuing to eat gluten,
but just don't realize it. I narrowed it down to rice, fresh vegetables,
and meat for months and slowly worked in other stuff as I was able to make
sure of the safety of it. Internet was still pretty new when I first
started with this so wasn't much real info out there. Nowdays there is huge
sources of info on this stuff.
