We go to Disney every year and we love it there.When you get to the park, stop at guest services and get a tag for the stroller that allows you to take it through the lines just like a wheelchair. This way you don't have to park it outside and hold your son. Some rides have a separate entrance for wheelchairs, so you can go through those if you have the tag.
At Epcot, there is a building where you can meet a whole bunch of characters.When we brought my daughter in last year, as soon as they saw that she was disabled, all the characters came and gathered around her and we have great pictures of our family with Mickey, Minnie, Goofy, Chip and Dale, Donald Duck, etc surrounding us. Everywhere we have been, they are very accomodating and kind to our whole family.
As for the car seat in the plane, we have always taken one. My daughter is almost 6, so we may not take it this year. She sits much more comfortably in the car seat and we need to have it for the rental car when we get to Florida anyway. It is safer for her if there is turbulence, and I have always felt better with her in it. The airline does not require it, so it is up to you.
