It is possible that some caramel coloring might contain gluten.
I expect most often it does not, as cane sugar and corn syrup
are often used to make caramel color.
I have celiac disease and I never worry about caramel
coloring. I consider the risk that it will contain gluten to be
very, very small, and in addition any amount I might consume
would also be very, very small.
I suggest the book Against The Grain.
And remember, rice is your friend.
It really gets a whole lot easier after a while, honestly.
