This list has been so quiet lately (except for the spammers). I
thought I would tell you about my experience with beans. As we know,
dried beans are supposed to be GF, but in the past, I would always
react to them. Finally figured out (duh) that the beans I was buying
were processed by a company that also processes barley. For a few
years, I didn't want to even look at them. Finally today I bought a
different brand of split peas. I didn't see any barley on the shelf
next to them. Made split pea soup this evening, and since it's so
cold here, it felt good. And I didn't get a reaction. So if you're
reacting to dried beans, check out whether or not the manufacturer
also processes barley.
I am hoping that all this quiet means that everyone here has figured
out what they need to do to stay on a 100% GF diet!

Meanwhile, here is the recipie:
SPLIT PEA SOUP
1 lb. dried split peas
1 medium onion, chopped
4 medium carrots, chopped
1/4 stalk celery, chopped
2 garlic cloves, pressed
2 cups GF ham, cubed (optional)
1/2 tsp. thyme, crushed
2 qts. water
salt/pepper to taste (after cooking)
Wash peas and remove defective ones. Soak overnight, or quick soak
(put peas in a pan and cover well with water - bring mixture to a
boil and then remove from heat. Let sit for an hour.). Drain again
and wash peas in cold water. Then put all ingredients (except salt
and pepper)in a large pot and simmer for about 2 hours until
everything is tender. More water can be added if needed. Makes 8-10
servings.
