Hi Kara, Im Lynne,Ive got celiac,dh and a bunch of other food
allergies as do my 6 kids,who are also gf. We dont have a whole lot of
money and do try to eat as healthy and inexpensive as we can,I also
homeschool so they are always here eating and its a lot of food to go
through. We do ham or cereal for breakfasts(fruity pebbles/cocoa
pebbles or rice puffs with honey)I also use cocoa pebbles to make pie
ccrusts and marshmallow treats with fruity and cocoa)eggs for those
that can,fruit,yogurt(we buy large ones of vanilla and mix cherry pie
filling or blueberry in it)Lunches and dinners: rolled up
lunchmeats,cheeses,lettuce wraps,nachos,tacos,steak and cheese
nachos,sloppy joe with chips or on baked or mashed potatoes,or on
rice,stir frys,fried chicken or veggies using mesa mix and adobo
seasonings,in the asian aisle is rice crackers,those are great with
pepperoni,cheese,lunchmeats also,rice pasta and sauce,sausages cooked
in sauce,pb&jelly,tuna,chicken salad dipped with potato chips or on
rice cakes(only plain are gf)chilli,salads,jennie o turkey
loafs,shepards pie,theres some ideas for you. It can be done. My kids
also have a wide variety of allergies on top of the celiac. You end
up eating so much healthier because youre going to read the labels and
choose the ones with the least amount of ingreadients and healthiest.
Make your own soups,Swanson has gf chicken broth. I have one child
allergic to chicken and corn as well as eggs,dairy,berries and gluten.
We use a lot of adobo seasoning. Hope this helps. Let me know if I
