It's hard adjusting your diet. I've been wheat free for four or five years now
and I started putting on weight too. I've always been one of those "lucky"
people who never gained weight no matter what or how much I ate. Now that my
innards have healed and I actually absorb food, I think that cream on top yogurt
and ice cream everyday is a bit much. A chocolate bar a day is too much too.
And for the first time in my life, I eat potato and corn chips for crunchies in
salads and soups. That adds fats to my diet. I used to get that full feeling
from a slice or two of whole wheat bread, now I have to think about it or I fill
up on garbage. I'm having to plan better and have foods on hand that I can
munch on with out eating a whole lot of fatty stuff or I go without and then
binge 'cause I'm starving. Rice cakes seem to help, but they are about as
appetizing as dirt. I'm learning though. I think if I were to halve the milk
products I eat, I'd stabilize my weight. It's hard realizing that I actually
could get fat now. I have to rethink all my eating habits. But I feel so much
better, it's worth it. Plus, I'm over 50 now and the natural tendency is for
the metabolism to slow down. A healthier diet just takes more thought and time
or that's what I keep telling myself.
I don't know about the cellulite thing. I assumed that the weight was because I
was actually absorbing fat now, not because celiacs do it differently.

I think I have eaten more fat in my diet than usual because, I've
gained 30 pounds since being on my gluten diet and also mucho
cellulite!! Is that just fat? orrr I'm thinking that because our
bodies don't digest the fats properly that get placed instead under
our skin leading to cellulite? I've always had problems with
cellulite even as a very skinny teenager!

Just wondering what anyone thinks or has anyone seen this posted
before or something like it?
