I think you may be talking about what is known as young coconut kefir. When you buy it in a grocery store, it looks nothing like a regular coconut. It has the white part of the husk on it, and it is flat on the bottom, round on the side of it, and comes to a point on top. You have to cut off enough of the husk to reveal the eyeholes. I used the teeth of a hammer to open them enough to get the juice to pout through.

You'll find good info on this site about kefir too.
        It doesn't get thick at all, but it turns sour, and this is basically how you know it's turned to kefir.
