You are invited to the Utah County Gluten Intolerance Group's Store
Tour Night!

Are you still unsure about what's safe to eat?  Do you dread going
to the store and having to search for gluten-free food?  Then this
special night is planned for you. Here is your chance to have an
experienced GF shopper walk through a grocery store with you, and
answer your questions.

It's Thursday night, Sept. 21 at 7pm at the Orem Harmon's at 8th
East and 8th North.  We will meet upstairs to start. There are
stairs at both front entrances – just look for our signs. (Free!)

In addition:

On Tuesday, Sept 26th Kirsti and Betsy of www.eatingglutenfree.com
are teaching a GF cooking class in Provo Macey's Little Theater.
7:00 p.m.  They will have 3 different gluten free noodles there to
try along with a bunch of different sauces.(Free Food!)

In October, we are having the Dietitian from Central Utah Clinic,
Rachel Higginson RD, speak to us. Her topic is "Food Frenzy"--How to
follow a healthy, gluten-free diet. We will also have a demo of some
amazing Minute Mixes from Food-Tek. (More details in the Sept. GIG
Newsletter)

It is true that you can get gluten free pasta at the Cannon Center.  I
work there and if somebody needs something just call ahead before you
go and ask for Bobby or Iliee.  We will make gluten free pasta.  The
pasta is made in a pot that is used to cook foods with gluten, but it
is always cleaned thouroughly before gluten free-pasta is made.  If
somebody ever has a question as to whether or not something is gluten
free, just ask for me (bobby) and I can tell you.  I work Tues.,
Thurs., and Sat. evening.

Welcome back to school everyone!

A friend who works on campus told me that there is gluten-free food
available at the Cannon Center. If you know anything about this please
post the details here. How did you arrange it? Is it really safe? It
would be very helpful to future BYU students.


The University of Chicago (where they have a Celiac Disease Research
Center) has great info for their future celiac students and the GF
college experience in general. It would be great if we could get this
kind of info on this site too.

Hi Ann. I am Mary Alma Miller, the soon-to-be president of the BYU
Celiac club. I do not know of people with celiac living near campus
that have a vacany, but I sympathize with your daughter's situation. I
myself live at home in Orem and am a senior at BYU hoping to graduate
within several months. If your daughter would like to contact me, my
e-mail is mmm9243@... and our club e-mail address currently is
celiac@.... There is also a great support group in the Utah county
area that you can find more about at www.gfutah.org. I'll let you know
if I find any female student with celiac who would be willing to share
a dorm or an apartment with your daughter. I'm hoping that within a
few years we can create a network so that people with celiac can get
together if they so desire. Until then, I'll see what I can do. Let us
know if there is anything we can do to help your daughter's BYU

Just wanted to let you know what's going on in the community in case you are going to be around for Spring and Summer.

 

The Utah County Gluten Intolerance Group support meeting is this week.

 

Thursday, May 4 at 7pm.

 

Join us to share your experiences and progress on the GF diet and learn from others.

 

Support group meetings are held the first Thursday of every month at Timpanogos Hospital, 750 West 800 North, Orem; Main floor, Cafeteria Classroom. (Go through the cafeteria to get to this room) Meetings are free and open to the public.

 

The sale at Harmon's in Orem will go until May 28th.

 

All of the Harmon's are having trouble keeping up with demand for the Kinnikinnick and Amy's stuff - it sounds like we really surprised them. Breads, English muffins and bagels are only $2.79 and the cinnamon buns, brownies and donuts are $3.79. Amy's bowls are $2.79. I suggest you call to pre-order, or to ask if they have any before going. I am posting the Harmon's ad with the contact info, in case you missed it. UCGIG leaders will be at the Orem Harmon's to give out samples and info on Saturday, May 6 from 11-1. That is, if they have enough product left in the store to give out samplesJ. If you are in the neighborhood, stop by and have a taste.

 

Last Thursday, the Provo Big Lots had a bunch of Barbara's rice crispy cereal and cornflakes for only $1.50 a box.

The Utah State Gluten Intolerance Awareness Walk is less than three weeks away!

 

It is Saturday, May 20th at Wheeler Farm. Registration and breakfast will be from 8:00-9:00.  Wild Oats is providing a yummy gluten-free breakfast for everyone. You can register that morning for $15 and get the walk t-shirt and goodie bag. The money raised will help the Utah Gluten Intolerance Groups expand our outreach in the areas of new patient support packets; dietician and doctor awareness education.

 

Please let me know if you can help with one of the kids' games. The walk and the door prizes will be over before noon so it won't take up your whole day. It will definitely be worth the drive!

 

Update on the GIG Annual Education Conference at the SLC Sheraton, June 9-11, 2006.

 

We still need volunteers to work in the exhibits area. It would involve things like giving out samples for absentee vendors. You can work for a couple of hours and get to see all the other exhibits free. This is going to be huge!

This is a recipie adapted from Marg@Cayman Designs and it's really good:

14 oz sweetened condensed milk
1 Tb peppermint extract
6 c powdered sugar
24-32 oz semi-sweet chocolate chips
4-6 Tb shortening
(My sister also adds cocoa powder and vanilla to the filling)

Combine the sweetened condensed milk and peppermint extract.  Slowly
add the powdered sugar and beat.  Knead on a surface sprinkled with
more sugar until dough is stiff.  (The stiffer the better when it
comes to the dipping part!)  Add more sugar while kneading if the
dough is sticky.  Roll 1/4 inch thick.  Cut into approximately 1 1/4
to 1 1/2 inch circles.  If they are much bigger than that, they fall
apart when you dip them.  (You can also roll then into balls like the
filling of a chocolate candy.)  Let the cut patties dry for at least 2
hours on each side.  They really need to be dry.  (In dry climates
liek Utah they only really need to dry for an hour on each side.)
Melt chocolate and shortening in a double boiler; stirring constantly
until smooth.  Using 1 Tb of shortening for every 6oz of chocolate.
Keep the chocolate hot for dipping.  Dip patties in melted chocolate.
  You can use your fingers but it's a lot less messy to place the
patties on a fork and dip them in the chocolate, flipping the patty
over and dipping again to coat the other side.  Shake off the excess
chocolate and then place on wax paper to harden.  Makes about 24
patties.

I like just about anything from Bob's Red Mill and Gluten Free Pantry
(excellent pizza crusts!). I also am learning to like Namaste's cake

I am Nikkie Benson, both my husband and I attended BYU roughly 13
years ago. We now live in Sandy, Utah. My husband was diagnosed with
Celiac about 6 months ago. We have been following the diet strictly
but my husband has not noticed any changes in how he feels. He is
going in for more lab work next week to check his antibody levels so
that we will know if the diet is actually effecting those. Hopefully
it is. All of my husbands symptoms have been GI and he has had them
since he returned from his mission to Ecuador. For many years we
thought it was the effects of amoebas or something else. Since my
husband does not have any obvious reactions to gluten (he tried it
to see, after been "clean" for 4 months) we are simply hoping that
his intestines are healing and his levels are improving. We have 4
kids and so far none of them have tested positive, however my
husband also has 2 sister, a brother, 2 neices and a nephew who have
tested positive. I try to keep our house mostly gluten free so that
if my kids are ever diagnosed, it will be an easy diet change. About
the only things that we do not do gluten free are bread and cereal
and of course the kids and I do not worry about it when we go out to
eat. I would be willing to go gluten free with our bread if I could
find a decent one to make that we all liked. I would love a recipe
with amaranth and quinoa so that it would have good protein content.
My husbands current favorite bread is the EnerG Seattle bread. His
second favorite is the Kinikinnick brown bread.

Hi, Kathy!  Thanks for your welcome.  I don't mind if you forward my message to the man at U of U.  However, I think that it might have been hard for me to avoid getting sick on my mission because we were pretty much told to eat whatever was in front of us if we went to a member or investigator's home to eat.  However, knowing the LDS and the investigators the way I do (or at least the investigators that I experienced), they would have more than willing to accomodate me had I known.  We can't have our missionaries getting sick in the field, so I know that the members in the wards and branches I missioned in would have been great in accomodating me.
Thanks for starting this group.  The great thing about church is that we now use rice bread for everyone, and it's not the dry stale tasting rice bread, either.  It's a brand that uses pure apple sauce in the recipe to keep it moist!

the U of U that wanted to do a study about Celiac Disease being
triggered while on a mission and how to prevent it. I don't know if he
is still trying to or not. I also don't know how he thinks someone

I love all those things.  But I think that my favorite is Bob's Red
Mill GF biscuit and pancake & waffle mix.  I'm from the south and I
love my biscuits and gravy for breakfast with a side of sausage.  The
only difference is that now I use Silk brand soy milk and corn starch
to make the sausage gravy instead of cow milk and flour.  It's great!
It tastes a little different from what I'm used to, but it's still
great!  Getting to eat my favorite things is like coming home after a
long trip.  The trip may have been nice, but it's always great to come
back home!

Hi, all.  My name is Darrell and I live in Lexington, Kentucky.  I
have never been a Cougar, and I wonder if my month at the MTC
counts, since it is on the BYU campus (or at least right next door
to it).  I went on my mission to the Canada-Montreal Mission twelve
years ago (it's hard to believe that I was at the MTC twelve years
ago, and that I will have been home for 10 years on March 1!), and I
was always sick during the entire time of my mission after I got
into the field.  In fact, at one point I was in such pain and was so
fatigued that my mission president sent me to the doctor, who told
me that I was probably just constipated. One month ago I was
diagnosed with CD, and all the pain and suffering over the last
twelve years make sense to me now. I'd like to be able to contact my
mission president to tell him that I have finally found out what the
problem was, and that I wasn't just a slacker.  I spent a lot of
time in the bathroom, and my MP actually suspected that I was hiding
in there so I wouldn't have to work, and that my complaints about
pains in my gut were so I could have attention and get assigned to
the mission office.  Oh well, my mission was great and I have no
hard feelings, but it's finally wonderful to know what's been wrong
with me all these years.  I have been (mostly) pain free for three
weeks now, and I have more energy than I've had in years!

Hi my name is Justin. I am 22 years old married to a beautiful bunette
named Rebbecca and I have had celiac sprue for a little over a year
now.  I live a fast paced life. I am a student at brigham you
University and I work part time at 10x Marketing. My greatest
challenge with celiac disease has been learning to cope with the extra
time it takes to prepare food. My wife and I have had to learn what is
fast and easy to cook as we are both strapped for time.
     I found out that I had celic disease after I got home from my
mission and never really could get over my upset stomach, lack of
energy and lack of ability to concentrate. After a several visits to
the doctor a few lost lab results and a lot of frustration. I recieved
the wonderful news that i could be fixed and that it wasn't serious. I
just had to watch my diet. Easier said than done. However, I am much
happier and healthier with out gluten.

Hi, I am Mary Alma Miller (mailcarriers and cashiers call me ma'am).
Ever since I was little, I would have an upset stomach whenever I had
a big pasta meal, ate anything with barley, or got really stressed.
When I started to college, I was stressed all of the time and I lost
weight and my blood iron went down steadily. My father is a general
practioner (family physician) and so became aware of how celiac
disease is being seen and diagnosed in many people nowadays. In
January 2004 I went to Timpanogos Regional Hospital and did the blood
tests. Both the EMA and AB gliadin IGA were out of range on the
positive end, and so I immediately started the gluten free diet. Two
years later I am gluten-free although I still am facing challenges
living at home. My mother buys gluten at the health store and
supplements into her whole wheat bread; however, she has helped me
learn how to cook delicious gluten-free versions of everything and
recently got me my own knife and cutting board for rice bread! So I
feel very blessed and hope that I can help out others who are new to
gluten-free living.

Medical researchers have found that Celiac Disease is not a rare disease of childhood as was previously thought. Research has shown that one in every 133 Americans may have celiac disease, (also referred to as gluten sensitive enteropathy, gluten intolerance, or celiac sprue.) The only treatment is a Gluten-Free diet which excludes even minute amounts of Wheat, Barley - for life. The Gluten-Free diet can be a difficult challenge for the newly diagnosed. People placed on a gluten-free diet need support and guidance from knowledgeable Dieticians, Nutritionists, and Food Scientists to help them eat safely.  Untreated Celiac Disease can lead to symptoms of starvation, nutrient deficiencies, anemia, osteoporosis, neurological problems, other autoimmune disorders, and even lymphoma.*

Hi All!
My name is Kathy. I am a pre-nursing student and the mom of five
boys. I had been ill for many years, and went to various doctors for
my problems: anemia, fatigue, heartburn/reflux, lots of mouth ulcers
(apthous stomatis), a weird skin rash on my knees and elbows that
would come and go, weightloss, etc.

Fortunately in the Feb. 2004 Reader's Digest, there was an article
called, "Ten Disease Doctors Miss."  My husband read it, and
immediately told me, "This is what you have, Celiac Disease!" The
next day I went to the BYU Health Center and got Dr. Astle to run
the blood tests. The rest is history!

So far my kids are all negative. Luckily I haven't given it to any
of them (yet?), but I did give it to my mom. She was tested after I
was diagnosed, so I feel responsible. LOL!  Trouble is, she won't
strictly follow the gf diet, and still calls me to complain when she
gets herself sick.
