This recipe is written for chicken but I use leftover turkey found it one
thanksgiving.

Goody Turkey Scallop
1 can 98% fat free Cream of Chicken soup
1/2 cup water
1/3 cup fat free mayo
1 tbsp soy sauce
2 tsp dried onion flakes
2 tsp dried parsley flakes
2 full cups (12 oz) diced cooked chicken or turkey
jar of mushrooms
1/2 cup frozen peas
1 cup uncooked minute rice
1/2 cup reduced fat cheddar cheese

Preheat oven to 350 degrees. Spray an 8 by 12 inch baking dish with
butter flavored cooking spray. In a large bowl, combine soup, water,
mayo,soy sauce, onion flakes, and parsley flakes. Stir. Add mushrooms,
peas, turkey, rice and mix well to combine. Spread mixture into prepared
baking dish. Cover and bake 45 minutes. Uncover. Evenly sprinkle
cheddar cheese on top. continue baking til cheese is melted. Let set 5
minutes before serving. Divide into 6 servings.

Per serving: 229 calories, 5 gm fat, 23 gm protein, 23 gm carb, 520 mg
sodium, 2 gm fiber
