I find that, probably once a week, we find ourselves with nothing to
make for dinner, and on those days, I can usually scrounge together
enough little pieces from the cupboards and freezer to make a
casserole. But what makes it all come together? Cheese.

Lowfat cheese is hard to come by here, but I *can* get lowfat cottage
cheese. Has anyone tried making a casserole with cottage cheese? I
haven't dared yet, but maybe someone can confirm that it is possible.
Anyone??

There is a recipe in The Gradual Vegetarian that I think calls for cottage cheese in Mac & Cheese. But I don't recall that it's very binding. ... -- Diane M....

Yes, In fact how my mom makes lasagna is to put cottage cheese, low fat ricotta, and eggs in the blender till its smooth and use that in the layers. I did...

When I do casseroles, I leave a small part (like 1/5 of the top) with just a little cheese, for me. Of course this won't work if you put the cheesy goodness...
