Here's a paper I put in JAT a few years ago that may be of some help.
It's heavy on theory, but I think it may help create more dialog for
graduates (more so than undergrads perhaps). Great list of references
too, if you want to get more into theory stuff and critical
multiculturalism.

There's also a good book for nursing education on diversity, but I can't
recall the exact author at the moment (it's in my office), but I "think"
it's Galanti. You can prob. find via a search on B & N, or Amazon.
