You said why he is gaining here.

Banana and being a diabetic. That alone is horrible for the body.

Go to the forum I mentioned and ask questions there.

He may not have been gaining before and I doubt this has anything to do with
quitting aspartame.

They have diabetics there and can tell you how to have a better diet.

No fruit at all for sure. NO breads and or pastas. Vegies are fine.

Meds can mess up stuff too.

There are some that may not agree with me but low carb is promoted by docs for diabetics to keep blood sugar under control. Lowcarber.org is the name I think...
