I recently discovered this group and have enjoyed lurking. My mother-in-law and two children (ages 5 and 2) have celiac. My husband is getting retested this summer; I think he'll get it eventually. He and I used to live in the SF Bay Area, and now we live in Pittsburgh, PA (originally from Buffalo, NY).
My sister-in-law (who doesn't have CD but is a foodie) has an excellent GF challah recipe that I'm waiting to get in the mail. In the meantime, I thought I'd share my MIL's recipe, which she adapted and my kids like, for whatever it's worth!
A question, first: Does anyone have a good GF hamentaschen recipe? My daughter's preschool class will be making them, so I want to make a GF version at home for her to bring in.

Ellen's GF challah
Mix and sift together:
2 c rice flour
1 3/4 c tapioca flour
1/4 c sugar
1 t salt
3.25 t xanthum gum
1 pkg Knox clear gelatin
Dissolve:
1 pkg dry yeast
1/2 c warm water
3 t sugar - add when yeast is dissolved
Add to dry ingredients:
1/4 c oil
1 1/4 c hot water
3 eggs
2 egg yolks
Add dissolved yeast mixture to all of above and beat for 3.5 minutes. Spoon into pan and rise in closed oven for 45 minutes.
Bake 375 for 45-50 minutes. Cover with foil after first 10 minutes. Test with knife to see if baked - if it comes out clean, it is okay.
Makes 1 large molded challah and 1 loaf size challah.
Bake loaf size for only 35 min.
