Corn starch, potato starch and arrowroot starch can all be interchanged measure for measure without issues. The Pesach cookbook, of course, is using Potato because of Pesach food standards. Tapioca starch can also be used in lieu of potato/corn/arrowroot but it can be fickle.

I just bought Tamar Ansh's Pesach cookbook and many recipes use potato starch.  Corn starch is much easier to buy (it's the base for the inexpensive GF flour at the grocery stores here in Israel - $1/bag).  I've never (never!) cooked or baked with potato starch, so don't know it's personality.  Does anyone know if I can just swap corn for potato in most recipes?  Or will I need to make some adjustments?
